  • 5 corn tortillas cut into strips or small pieces
  • 5 large eggs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 small onion diced
  • 1 jalapeño pepper seeded and diced
  • 2 cloves garlic minced
  • 1 medium tomato diced
  • 1/3 cup shredded cheddar or Monterey Jack cheese
  • Fresh cilantro chopped, for garnish

Instructions

  • Slice the corn tortillas into strips or small pieces. In a bowl, whisk the eggs and add salt and pepper for seasoning.
