I have many summertime memories in the kitchen, standing near my mom and husking corn for a barbecue. Whether it was Memorial Day, July 4th, or Labor Day, husking corn became my “chore.” As much as I loved eating sweet corn on the cob, I just couldn’t stand the prep work. Not only was it messy, but it was also a bit annoying! Aside from husking the corn, I also ended up sweeping the kitchen floor from all that corn silk.

While I was used to eating corn after it was boiled or grilled, I never considered using the microwave. Once I grew up and began hosting my own barbecues, I didn’t have the time or attention to give to corn. I had to check on the chicken wings and hot dogs, after all! I couldn’t believe how easy it was to microwave corn on the cob. Not only that, but I wasn’t sacrificing any flavor, either.

After a few minutes in the microwave, the husk will fall off easily. The corn is just as juicy as any other method of cooking corn on the cob. The only difference is that you’re saving yourself time and effort. Before you know it, you’ll be enjoying quick and easy microwave corn on the cob.

Is Microwave Corn On The Cob Healthy?

Microwave corn on the cob has plenty of health benefits. It’s a good source of vitamins A, B6, and C. Corn also contains minerals like iron, zinc, and magnesium. Corn has both soluble and insoluble fiber, which can help you stay full for a longer time. It’s also naturally a gluten-free grain. What you’ll want to pay attention to is your favorite toppings. While corn is healthy as is, you could be adding tons of calories with butter and cheese.

Get The Timing Right

While this is a simple recipe, it’s important to get the timing right when you’re microwaving corn on the cob. Typically, you want to microwave each ear of corn for four minutes. If you’re cooking four ears of corn, start with five minutes and then check them every 30 seconds after that. If it’s just half an ear, you should microwave it for three minutes. Since every microwave is different, it may be helpful to check on the corn after three minutes to make sure it’s cooking properly. An easy way to know is by peeling back the husk slightly and checking for softness with a fork. Since a little trial and error might be required at first, you’ll want to keep an eye on the corn to make sure it doesn’t overcook.

How Do I Store Leftovers?

To store your leftover microwave corn on the cob, allow it to cool completely before placing it in an airtight container. It will last in the fridge for about 3-5 days. If you want to freeze microwave corn on the cob, it should last for up to 4 months. When you’re ready to reheat it, cover the corn with a wet paper towel and microwave it in 20-second increments until it’s warm.

Serving Suggestions

One of my favorite ways to enjoy microwave corn on the cob is with fun toppings. Butter and salt are common, but I also like to add different spices. My favorite presentation is Mexican street corn, which is slathered in mayo, cheese, garlic powder, chili powder, and cilantro. Of course, that’s definitely considered a guilty pleasure, so I’m going to pair it with a big Green Salad or Panzanella Kale Salad With Apples, Bacon, And Cheese Vinaigrette.

As for a traditional barbecue, corn on the cob is the perfect side dish. For example, serve it next to BBQ Pork Chops or Hawaiian BBQ Chicken. For the classics, try these recipes for Cajun Burgers With Sweet Potato Buns and Bacon-Wrapped Hot Dogs. I also like to load up on sides by eating corn with Coleslaw and Grilled Squash. Instructions

  • Place the corn with its husk intact in the microwave. Microwave on high for 4 minutes. If the corn is overdone, try 2-3 minutes next time.

  • Carefully remove the corn using a kitchen towel or pot holder. Cut off the bottom of the corn, about one row of kernels from the stem end.
