This twist on the classic pesto recipe uses macadamia nuts and coconut oil and is paired with grilled fish kebabs for quick, easy and healthy dinner!
Well. It happened again.
And by “it” I mean “Monday.’
I could seriously put up a good argument to change “Monday” to “it.” I mean, any day after a weekend that involves going back to work does NOT deserve to be named right?
We could even pull a Harry Potter and call it “The Day That Shall Not Be Named!” Do you like it? Do you agree?
Sidenote: my brain is constantly one foot in recipe-development land, one foot in La la Taylor Land and one foot in Harry Potter Land due to the hubs’ obsession with watching the movies OVER AND OVER.
I am also not sure how my brain has 3 feet to place in aforementioned lands. Or if it even has A foot. Yet another installment of “Things To Ponder by Taylor.”
Your weekend. You know that mine involved sticks of wood that make cool things happen, so how was yours? I hope that it was ALL THE FUN.
You know what also happened during my weekend? I made the Huberoni a grumpy pants.
Which COULD be why he watched Harry Potter on repeat. He knows that it gets all stuck up in my head and drives me ca-ray-zay.
This is how the story goes: It was late Saturday evening (9:00pm – I’m old) and it was time to go to bed (yep, total party ANIMAL) So, we did.
Isn’t this story exciting?
THEN! *suspenseful pause* I woke up at MIDNIGHT and shook the hubs awake!
“Caleb! Caleb!” I exclaimed.
“WHAT’S WRONG?!” He yelled as he jumped to his feet from the un-expected wake up call.
“You know how I have been on non traditional pesto recipe train with the lentil coconut curry with cashew cilantro pesto? Do you think that a pesto recipe would be good with cilantro, macadamia nuts and coconut oil instead?”
Then Mr. FFF mumbled smothering un-intelligible…and I woke up to the sound of Harry potter number eleventy billion playing on TV.
It may have been SLIGHTLY less dramatic than that. But, you get the picture. Sometimes a girl just needs a little reassurance, you know?
Men, they don’t get it.
So, into my blender went above mentioned idea ingredients went and on went the power. Which means “WHIZZZ” went the blender and I had a few moments where I couldn’t hear Daniel Radcliffe shout “LUMOS!” or whatever. It was magical.
In a non-wizardy way.
And, the taste of it all smothered on grilly sea-critter goodness with sweet,smokey pineapple?
No blender-to-cover-the-noise-of-the-tv needed.
My brain grew a fourth foot and it planted itself right into happy taste bud land.

Hahaha! I love your hubby’s form of revenge. And I don’t blame you even a little bit for NEEDING to know the answer right that second. Doesn’t sound like he was much help though. LOL. I love making my own pesto, I’ve never used macadamia nuts because they are so friggin expensive but now you’re really making me want to try it!! Plus, you know I love my seafood, so I’ve gotta try this

I love pestos with their endless combinations, and this one is so creative! These kebabs look so light and delicious, and I love all the Harry Potter references. Those movies were some of the best ones I watched with my kids (over and over and over), and I’m kind of sorry they’ve gotten all grown up and don’t watch them anymore. I may just need to pull them out. 🙂
