How To Make Vegan Lemon Cookies

While it can be intimidating to transform a non-vegan recipe into a vegan one, it’s not impossible. Using the same simple steps below, vegan lemon cookies can be whipped up by replacing dairy butter with vegan butter and using an egg replacer. Today, there are some egg alternatives in stores, but you could also make your own by mixing 1 tablespoon of ground flaxseed with 2 1/2 tablespoons of water in a small bowl for each egg. This measurement can be adjusted depending on the number of eggs needed. Let it sit and thicken for 5 minutes before incorporating it into the cookie dough. Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 tablespoons lemon zest
  • 1 large egg
  • 1 1/3 cups powdered sugar
  • 2-3 tablespoons fresh lemon juice

Instructions

  • Preheat the oven to 350°F.
  • In a small bowl, whisk together flour, baking powder, and salt. Set aside.
