My favorite condiment is mayonnaise. It always has been and always will be. Sure, there are times when mustard or ketchup are better suited to a sandwich, hot dog, or burger, but most of the time, I go with the mayo. In my quest for healthy alternatives, I have discovered the ease of making delicious keto mayonnaise at home.

All you need is eggs, Dijon mustard, lemon juice, avocado oil, and salt (note: you can substitute extra virgin olive oil for the avocado oil if you’d prefer). If you already stock these pantry staples, then making keto mayo will be quick and easy. Whether you’re on a keto diet or not, this mayonnaise is tasty, simple, and easy to make.

Is Keto Mayonnaise Healthy?

Mayonnaise often gets a bad rap because of the calories, sodium, and preservatives. Some products are better than others, but preparing mayo from scratch helps you make it healthier by controlling the ingredients. So, if you’re like me and you love mayo, make it at home and enjoy!

Why Should You Make Keto Mayonnaise?

If you’ve never looked closely at the labels on mayonnaise jars, maybe now’s the time. Some of them are downright scary with their lists of chemicals and abbreviations. There are modified starches, various oils (not all healthy), and a chemical called EDTA.

By making homemade keto mayonnaise, you avoid any undesirable additives. In fact, the only ingredients in this recipe are egg yolks, Dijon mustard, fresh lemon juice, avocado oil, and a tiny amount of salt. That’s it! No chemicals, no EDTA, no starches, no sugar. And it’s so quick and easy to make that you can whip some up any time you want.

How do I store leftovers?

Store your keto mayo in an airtight container in the refrigerator for up to 14 days. Freezing mayonnaise changes the texture and quality, so we don’t recommend doing that.

Ingredients

  • 1 large pasteurized egg yolk at room temperature
  • 1 teaspoon Dijon mustard
  • 1 3/4 teaspoons fresh lemon juice
  • 1 cup avocado oil
  • 1/8 teaspoon salt plus more to taste

Instructions

  • In a medium bowl, whisk together the egg yolk, Dijon mustard, and lemon juice until smooth.
