Instructions
- In a medium bowl, whisk together the egg yolk, Dijon mustard, and lemon juice until smooth.

- Continue whisking as you gradually incorporate the avocado oil, beginning with a few drops and then pouring it in a thin, steady stream until the mixture thickens.

- Mix in the salt, then taste and adjust the seasoning as necessary. Transfer the mayonnaise to a container and chill it in the refrigerator.
