And this Instant Pot tri-tip recipe helps me get a high-protein dinner on the table with nearly zero effort!

The Instant Pot makes the tri-tip unbelievably moist and flavorful. It truly works magic, transforming the meat into a tender, juicy, and richly spiced entrée. I rely on my Instant Pot when my schedule gets hectic, and it’s become my go-to appliance for quick, convenient meals that don’t sacrifice flavor. You can find Instant Pots in most department stores or online, and they make thoughtful housewarming gifts or presents for anyone learning to cook.

How do I store leftovers?

Store leftover Instant Pot tri-tip in an airtight container in the fridge for up to 4 days. You can also freeze it in a freezer-safe container or bag for up to 4 months. Thaw overnight in the fridge. Reheat gently on the stovetop with a little broth or covered in a 325°F oven until warmed to a safe internal temp of 165°F, about 20-45 minutes, depending on the thickness of your steak.

Ingredients

  • 2 pounds tri-tip
  • 1/2 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 1 1/2 teaspoons paprika
  • 2 teaspoons brown sugar
  • 1 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • 1/2 teaspoon black pepper
  • 2 teaspoons olive oil
  • 1 small onion chopped
  • 1 tablespoon minced garlic
  • 1 cup beef broth

Instructions

  • Trim off any excess fat from the tri-tip. In a small bowl, mix garlic powder, onion powder, paprika, brown sugar, salt, crushed red pepper, and black pepper. Rub the spice blend all over the meat.

  • Set the Instant Pot to the sauté mode and add olive oil. Sear the tri-tip on all sides until a brown crust forms, about 1-2 minutes per side. Remove the meat and set aside. Add the chopped onion to the pot and cook until soft, about 5-7 minutes. Then stir in the minced garlic for about 1 minute.

  • Pour in the beef broth and use a wooden spoon to scrape up all the brown bits from the bottom of the pot. This adds flavor and prevents burning.

  • Place the trivet in the Instant Pot. Lay the seared tri-tip on top of the trivet so that the meat is not sitting in the liquid.

  • Seal the Instant Pot and set it to high pressure for 25 minutes. Once the cooking cycle is complete, allow the pressure to release naturally for about 10 minutes before doing a quick release of any remaining steam.
  • Remove the tri-tip and let it rest for 5 minutes. Slice the meat against the grain and serve immediately.
