Perfectly cooked Instant-Pot Boiled Potatoes couldn’t be easier to make. They will pair beautifully with almost any family dinner!

I don’t know about you, but I fell in love with my Instant Pot back in 2020. It has been a real lifesaver when it comes to cooking meals in a fraction of the time, and for a busy bee like me, that’s a game changer. I use it for soups and stews that would normally take hours to simmer on the stovetop, for quickly tenderizing meats or beans, and for cooking rice that comes out perfectly fluffy every time.

Today, I’m going to show you how to cook whole potatoes in the Instant Pot, and trust me, it’s about to become your new favorite method! It’s SO easy, SO much faster than boiling them on the stovetop, and the result? Perfectly tender, fluffy-on-the-inside potatoes every time! Plus, because the Instant Pot uses pressure-cooking, it locks in moisture, which means you get consistently soft potatoes without the risk of them drying out or overcooking. Talk about foolproof!

Are Instant-Pot Boiled Potatoes Healthy?

Without a doubt! While potatoes sometimes get a bad reputation for being fattening, it’s not the humble, plain potato that’s the issue—it’s how we prepare and serve them. French fries or hash browns can be high in fat, but a baked potato with a squeeze of lemon juice, a light drizzle of olive oil, and a sprinkle of flaky sea salt is a healthy option. Add a couple heaping tablespoons of sour cream or smother them in melted cheese, and that’s where the extra calories and fat come in!

What Can I Do With Boiled Potatoes?

Let’s face it. Plain, boiled potatoes can, however, be a little boring. But who said we couldn’t give them a delicious culinary makeover? A great way to use them is in smashed potatoes. Simply cut them into small pieces (no need to remove the skins), brush them with olive oil, season them with salt, pepper, and spices such as smoked paprika powder, and bake at 400°F for 35 to 45 minutes, depending on their size. You could also let the potatoes cool, dice them, and use them in frittatas, potato salads, or egg casseroles. Boiled potatoes can be mashed and used to make gnocchi or crispy potato croquettes. And have you ever tried boiled potatoes in a French tartiflette? You haven’t? Well, you’re in for a treat! Simply layer slices of boiled potatoes with diced crispy bacon, sautéed onions, and Reblochon cheese. Pour some white wine over the dish, and into a 400°F oven it goes. You’re only 30 minutes away from one of the most decadent French winter dishes ever!

How To Make Ahead and Store

Boiled potatoes, once cooled, can be stored in the fridge in an airtight container for up to 3 days. Freezing is not recommended as the high water content will mean mushy potatoes once thawed!

Serving Suggestions

Potatoes can be the perfect side dish for a Simple Coffee-Rubbed Steak, some aromatic Rosemary Chicken, or Healthy Baked Salmon. You can also remove the skin, chop them up and add them to a comforting bowl of Chicken Soup.

Instant Pot Boiled Potatoes

Ingredients

  • 1 cup water
  • 1 pound potatoes (I used red)

Instructions

  • Place the water in the Instant Pot and place a trivet in the pot.
  • Place the potatoes on the trivet, cover and set to "Sealing."
  • Cook on manual high pressure for 13 minutes. Do not do a quick steam release. Let it release naturally.
