A simple yet colorful appetizer, this ceviche is made with imitation crab but tastes like the real thing.

As much as I enjoy fresh, authentic crab meat, it’s not always easy to get. If you don’t live near a seafood hub, crab can be expensive or hard to find in stock, and sometimes, you have to settle for imitation crab. But you’d be surprised at the great dishes you can still make with this ingredient. One of my favorites is ceviche. This recipe is filled with so many other fresh ingredients and bold flavors that you won’t mind it’s imitation crab instead of the real thing.
If you’re looking for a chilled appetizer or a simple light dinner with a seafood theme, imitation crab ceviche is a great option. Crab isn’t the only flavor you’ll taste in this dish. The avocados, tomatoes, onions, and lime juice all bring something to the table. You might be surprised at how all the flavors meld together to create something you’ll want to make again and again.
Is Imitation Crab Ceviche Healthy?
With a low fat and calorie content, imitation crab ceviche can be considered a fairly healthy dish. Imitation crab meat is made of white fish that has been processed into sticks. It has some protein, but is also high in carbs—starch is often used to help bind the ingredients into the stick shape. It’s also less nutrient-dense when compared to actual crab meat, which has more vitamins and minerals.

How To Make Ahead And Store
Ideally, ceviche will spend at least 1 hour in the fridge before it’s consumed to let the flavors mingle. After that, it’s best enjoyed fresh. If you have leftovers, put the ceviche back in the fridge in an airtight container, but try to finish it within 2 days, as the avocado will turn brown, and the veggies will become soggy.Z

Serving Suggestions

Ingredients
- 1 pound imitation crab meat shredded
- 1 large ripe avocado diced
- 1 medium red onion finely chopped
- 2 medium tomatoes seeded and diced
- 1/2 cup cucumber diced
- 1/4 cup fresh cilantro chopped
- 1/4 cup fresh lime juice about 2 limes
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the shredded imitation crab meat with diced avocado, red onion, tomatoes, cucumber, and chopped cilantro.

- Add fresh lime juice over the mixture and season with salt and pepper. Gently toss to ensure all ingredients are well coated and the flavors begin to meld.

- Cover the bowl with plastic wrap and refrigerate for at least 1 hour, allowing the flavors to fully develop and the ceviche to chill.
