- 1 pound imitation crab meat shredded
- 1 large ripe avocado diced
- 1 medium red onion finely chopped
- 2 medium tomatoes seeded and diced
- 1/2 cup cucumber diced
- 1/4 cup fresh cilantro chopped
- 1/4 cup fresh lime juice about 2 limes
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the shredded imitation crab meat with diced avocado, red onion, tomatoes, cucumber, and chopped cilantro.

- Add fresh lime juice over the mixture and season with salt and pepper. Gently toss to ensure all ingredients are well coated and the flavors begin to meld.

- Cover the bowl with plastic wrap and refrigerate for at least 1 hour, allowing the flavors to fully develop and the ceviche to chill.

- Serve the chilled imitation crab ceviche with tortilla chips or over a bed of greens for a refreshing appetizer or light meal.
