Green goddess dressing originated in the 1920s and was created at the Palace Hotel in San Francisco, California. It’s said that the dressing is named for a famous actor named George Arliss, who was the lead actor in a 1920s play called The Green Goddess. While the actor was staying at the hotel ahead of a performance of the play, the head chef, Philip Roemer, created the dressing to top a starter salad.

- 1 cup mixed herbs e.g., mint, basil, chives, and dill
- 2 spring onions chopped
- 2 tablespoons lemon juice
- 1/4 cups olive oil
