Ingredients
- 2 ripe avocados pits and peels removed
- 1 cup parsley
- 1 cup mixed herbs e.g., mint, basil, chives, and dill
- 2 spring onions chopped
- 2 tablespoons lemon juice
- 1/4 cups olive oil
- 2 tsp capers
- 1 clove garlic
- Salt and pepper
Instructions
- Place all of the ingredients into your food processor.

- Blend until smooth. You may add a little water if it is a bit thick.
- Scoop out into a serving bowl and enjoy as a dressing, a dip, or a spread.
