Greek Yogurt Coleslaw

Colorful, creamy, shredded and zesty. This Greek yogurt coleslaw is a homemade alternative to store-bought coleslaw, and is mighty healthy and delicious. The combination of green and purple cabbage delivers a texture, taste and look that is just right. Essentially, it’s a cabbage salad with a creamy dressing that greatly balances the crunch from the cabbage. This tangy side dish reminds me of summertime BBQs and picnics at the park.

This recipe was designed for those who prefer their coleslaw without mayo. Swapping it for Greek yogurt results in a great alternative to traditional coleslaw. It’s also quick to prepare and serves up to six people, meaning it’s party-sized!

Is Greek Yogurt Coleslaw Healthy?

This coleslaw recipe is a homemade alternative to your typical mayo-laden and often overly sweet store-bought version. It’s healthy, light and easy to whip up. The base of this salad is the shredded green and purple cabbage. They are excellent sources of vitamin C and K, while purple cabbage is especially high in vitamin A. Cabbage is also high in fiber and great for your digestive health. Then, there is the cup of carrots which are loaded with beta-carotene.

There are so many fun variations you can create with this salad, especially when it comes to the dressing. Adding tzatziki gives it a great garlicky flavor and creamy consistency, which you can also achieve with a Caesar dressing. How to make ahead and store

Prepare the ingredients by mixing both the dressing and vegetables together. Then, store properly by placing the coleslaw in an airtight container or a bowl covered with beeswax wrap (for a non-plastic option) and refrigerate. The flavor of the coleslaw improves after resting in the fridge overnight, making it the ideal recipe to prepare before a party or at the start of your week for meal prep. Enjoy the coleslaw within 2 to 3 days of preparation for the best results!

Ingredients

  • 4 cups shredded green cabbage
  • 2 cups shredded purple cabbage
  • 1 cup shredded carrots
  • 1/2 cup plain low-fat Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon celery seeds
  • Salt to taste
  • Black pepper to taste

Instructions

  • In a large bowl, combine green cabbage, purple cabbage, and carrots.

  • In a separate small bowl, whisk together Greek yogurt, apple cider vinegar, lemon juice, honey, Dijon mustard, celery seeds, salt, and black pepper until fully combined.
