Whip up this creamy, herbaceous spread that’s perfect for toast, baked potatoes, and more!

The other day, my mom made garlic butter. But this wasn’t just any old garlic butter—this whipped butter had a bold blend of garlic, Italian seasoning, and fresh parsley. The herbs, which were plucked fresh from her garden, made a delectable addition that filled the whole kitchen with a refreshingly earthy fragrance. It was like the garlic butter of the “old days,” but better, with a whole harvest of surprise flavors.

At the time, she had made it to spread on toast, for an herb-infused garlic bread that our whole family drooled over. But then she saved it in the fridge for the following week, to use in all kinds of dishes—omelets, sautéed veggies, and mashed potatoes, just to name a few. With that kind of versatility, garlic butter is sure to become a favorite for any meal.

And since the butter is softened and whipped to a creamy consistency, it’s easy to spread. So whether you use a knife or a spoon, garlic butter is nearly effortless to serve. What’s not to enjoy?

Can I use plant-based butter?

Although this recipe is designed for traditional butter made from cow’s milk, you’re welcome to try it with your favorite vegan butter. Try to find the creamiest brand possible so your garlic butter whips smoothly the way it’s supposed to. I also recommend trying this same blend of garlic and herbs with cream cheese or sour cream to make a yummy dip that will leave you licking your lips in satisfaction.

How do I store leftovers?

Even though it only takes 5 minutes to whip up, this decadent garlic butter can last much longer in the right environment. We like to store ours in a mason jar for optimal sealing, then keep it in the fridge for 5-7 days. But you can use any airtight container, as long as it’s properly sealed. Some people like to leave their garlic butter out so it stays soft, but on hot days it might melt completely, so be careful of that. The easiest thing to do is keep it in the fridge and then take it out 15-20 minutes before serving it so it has time to soften.

Serving suggestions

Imagine waking up one morning to the fragrance of Garlic Toast, but it’s slathered in herby garlic butter. Or you can spread some on a Bagel Sandwich for more flavor. On the other hand, garlic butter works just as well on Sweet Potato Cornbread, Mashed Red Potatoes, Rice Pilaf, or Potato Rolls for dinnertime. However you choose to spread it, garlic butter is a great way to meet your most garlicky cravings any time of day.

Ingredients

  • 1/2 cup unsalted butter softened
  • 3 cloves garlic minced
  • 1/2 teaspoon Italian seasoning
  • 2 teaspoons fresh parsley finely chopped
  • 1/4 teaspoon salt plus more, to taste
  • 1/4 teaspoon ground black pepper

Instructions

  • Place all ingredients in a medium bowl.

  • Stir the softened butter, minced garlic, Italian seasoning, fresh parsley, salt, and pepper until well combined. If desired, use an electric mixer to make it extra light and creamy. Taste and adjust seasonings as needed.
