Corn, which also goes by the name “maize,” was first domesticated in southern Mexico 9,000 years ago and was introduced to Europe by Christopher Columbus. I’m personally very grateful because I can’t imagine my life without buttery corn on the cob, comforting corn chowder, and this refreshing corn salsa recipe.

Either way, corn is high in fiber and contains antioxidants, vitamins, and minerals. Red peppers and jalapeño peppers also contain vitamins A and C, potassium, and lutein. This corn salsa is gluten-free and low in calories.

Ingredients
- 3 cups fresh corn kernels from about 4 ears of corn
- 1 medium red bell pepper finely diced
- 1/2 medium red onion finely diced
- 1 jalapeño deseeded and finely diced
- 1/3 cup chopped fresh cilantro
- 3 tablespoons fresh lime juice or juice of 1 lime
- 1/2 teaspoon sea salt plus more to taste
