Ingredients
- 3 cups fresh corn kernels from about 4 ears of corn
- 1 medium red bell pepper finely diced
- 1/2 medium red onion finely diced
- 1 jalapeño deseeded and finely diced
- 1/3 cup chopped fresh cilantro
- 3 tablespoons fresh lime juice or juice of 1 lime
- 1/2 teaspoon sea salt plus more to taste
- 1/4 teaspoon ground black pepper plus more to taste
Instructions
- In a large bowl, combine all of the ingredients. Stir until well mixed. Adjust the seasoning as needed.

- Serve immediately, or allow the salsa to chill in the refrigerator for 1-4 hours before serving to enhance the flavors. Serve as a dip or a topping.
