Tips and tricks for customizing your cloud eggs
One of my favorite parts about this recipe is that it’s almost endlessly customizable. Once you’ve mastered the basic technique, there are countless ways you can adjust this recipe to match your individual tastes. First, I would recommend experimenting with different herbs. You could try adding basil, dill, parsley, or thyme to mix up the flavor profile. Jonesing for a bit of spice? Feel free to play around with adding red pepper flakes, smoked paprika, or a dash of hot sauce to this dish. If you’d like to add a little protein to this recipe, I also suggest adding grated cheese, diced pancetta, bacon, or ham to make this dish even more substantial. Finally, there are a number of different sides you could also pair with your cloud eggs. Try serving them with a slice of toasted sourdough or English muffin. But don’t just take it from me—go ahead and explore different customization options until you find the one that works best for you.
How do I store leftovers?
These cloud eggs are best enjoyed when they are still fresh. You certainly can store leftovers if needed, but just keep in mind that the storage process may alter the texture of this dish. To store any leftover cloud eggs, first place the remaining eggs in an airtight container. You can store them in the refrigerator for up to 1 day. To reheat, I suggest heating your leftovers in the oven at a low temperature until they are warmed through.

Serving suggestions
These cloud eggs will make a fancy focus for your next breakfast or brunch spread. Want to fill the meal out? Pair them with Air-Fryer Bacon or Smoked Salmon Salad for protein or a sprinkle of fresh arugula for some added greens. You could also serve your cloud eggs alongside a fresh batch of these Cottage Cheese Pancakes. For a brunch-worthy dish that makes a great addition to any gathering, I’d also suggest pairing your cloud eggs with this Hashbrown Casserole.

Ingredients
- 2 eggs
- Pinch of salt and pepper
- 1/4 cup grated cheese optional
- 1 tablespoon fresh chives chopped, optional
Instructions
- Separate the egg whites from the egg yolks. Add the whites in a large bowl. Keep each yolk separate, in 2 smaller bowls.

- Whisk the egg whites with salt and pepper using an electric mixer at high speed until stiff peaks form.
- Gently fold the cheese (if using) through the egg white, making sure not to lose any air. Spoon the egg whites into 2 mounds onto a large baking sheet lined with parchment paper.

- Make a well in the middle of the egg whites with the back of the spoon. Bake them at 375°F for 5 minutes until set.

- Remove from the oven. Gently slide a yolk into each well. Bake the cloud eggs again, until the yolk is cooked but still runny. Garnish with fresh chopped chives, if desired.
