Egg rolls are not just for Chinese food anymore, as evidenced by this delicious Buffalo chicken egg roll recipe. I live near the central Florida theme parks, where you can get all kinds of wild egg rolls, including Reubens, cheesesteaks, bacon mac and cheese, and cheeseburgers, depending on the season and schedule. There have even been Buffalo chicken egg rolls in the past, and they taste like if a chicken wing and egg roll got together and had a baby. Decadent? Yes! Delicious? Double yes! Go ahead, indulge. These egg rolls are so easy to make that you’ll want them whenever you have leftover chicken.

I know what you’re thinking—these chicken egg rolls don’t sound healthy. You’re right. They’re not the most nutritious appetizer. While the celery and chicken offer some balance and cheese provides calcium, the fact that these egg rolls are deep-fried might not make them the healthiest choice for everyone.

However, as an occasional indulgence, they’re not as bad as some other recipes. You can even air-fry them or bake them as a healthier option. And feel free to trade the cream cheese for Greek yogurt. It’s just as delicious, and the tangy flavor works well with these rolls.

The secret to perfect egg rolls is how to roll and seal them. But don’t worry—egg rolls are not as difficult to make as you’d think. After you master the filling and rolling process, it’s quick and easy.

Once you place the filling in the egg roll wrappers and roll it up, brush water on the remaining corner of the wrapper with a pastry brush. The water will help the wrapper stay closed during the cooking process. If you forget the water, your egg rolls could open and the chicken could ooze into the fryer oil.

One more thing—for extra flavor, add shredded carrots or cabbage, sliced scallions or chives, or even cilantro.

After they cool, leftover egg rolls can be stored in an airtight container in the fridge for up to 3 days. Ingredients

  • 2 cups cooked chicken shredded
  • 1/2 cup Buffalo sauce
  • 1/4 cup cream cheese softened
  • 1/4 cup blue cheese crumbled
  • 1/4 cup celery finely chopped
  • 8 egg roll wrappers
  • Vegetable oil for frying

Instructions

  • In a mixing bowl, combine shredded chicken, Buffalo sauce, cream cheese, blue cheese, and chopped celery until well mixed.

  • Lay out an egg roll wrapper and place a heaping spoonful of the chicken mixture in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the final corner with a dab of water.
