These Baked Sweet Potato Slices make for a quick and fun presentation of this tasty superfood!

Baked Sweet Potato Slices

Sweet potatoes are considered a superfood because they are so nutritious. This recipe for baked sweet potato slices ensures that those potatoes stay healthy, especially when compared to frying. It’s simple, quick, nutritious, visually appealing, and inexpensive.

I love sweet potatoes cooked in any form. Any way you slice or dice them, they are delicious! I especially like to slice and bake them with pineapple and salmon. I use a large dish to fit an entire salmon filet, arrange the pineapple and sweet potato slices around it, and pop it into the oven. The dish is so easy that it practically serves itself. Just set the dish on the table, and dinner is good to go.

Are Baked Sweet Potato Slices Healthy?

The sweet potato provides so much nutrition. If I had to choose just one food to live on and couldn’t cheat by choosing a salad, I would likely choose sweet potatoes. They’re loaded with antioxidants, prebiotics, vitamins, and minerals, making them the total package. They are often considered one of the healthiest vegetables of all.

What Can I Add to These Baked Sweet Potato Slices?

If you’d like to add flavors, wait until nearly the end of the baking time (with 5 or 10 minutes to go). Then try adding garlic powder, nutritional yeast, or both at the same time. Parmesan sprinkled on top, with or without garlic powder, would be yummy. Or you could add a Latin-inspired seasoning mix to give it a Mexican flair. Perhaps some cinnamon or cardamom with a bit of honey for a hint of sweetness. If you like heat, add Cajun seasoning, chili powder, red pepper flakes, or hot sauce.

How to Make Ahead and Store

Once baked, cool, then refrigerate in an airtight container for up to 2 days. To reheat, they can be put in the microwave or reheated in a 400-degree oven for about 10 minutes. Consider dicing them up to add to another dish, such as scrambled eggs or beans.

Serving Suggestions

Salmon with baked sweet potato slices and pineapple is my go-to meal for company. Try an easy salmon recipe, such as this Delicious Miso-Glazed Salmon. Ingredients

  • 4 medium sweet potatoes sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Preheat your oven to 425°F and line a baking sheet with parchment paper.
  • In a large bowl, toss the sweet potato slices with olive oil, salt, and pepper until evenly coated.

  • Arrange the coated sweet potato slices in a single layer on the prepared baking sheet.

  • Bake in the preheated oven for 15 minutes, then flip the slices and continue baking for another 10 minutes or until they are golden and crispy.
