Try these Baked Oatmeal Bars for a wholesome, naturally sweetened breakfast or snack that you can feel good about!

Whenever my best friend Cindy goes out of town, I am always on call to look after her three kids. And with two of them being young boys, let’s just say that I rarely have anything left in my fridge after our time together. To combat their voracious appetites, I always do my best to have plenty of snacks and easy-to-prep meals on hand.
These baked oatmeal breakfast bars have become one of the boys’ favorite treats to devour when they come to visit. These easy-to-make bars come together in a single bowl and bake into chewy, golden squares bursting with cozy flavors. The rolled oats provide plenty of texture and long-lasting energy. Mashed banana and honey round out the flavor profile with a bit of natural sweetness, and the warm flavors of cinnamon complement the other ingredients. A handful of chocolate chips makes these bars taste as decadent as they look.
Whether you’re wrangling kids early in the morning or simply looking for a nutritious snack that’s easy to take on the go, these breakfast bars are sure to deliver. Try this recipe today for a convenient bite with just the right amount of indulgent flavor.

Tips and tricks for customizing your oatmeal bars
One of the best parts of this baked oatmeal breakfast bars recipe is just how flexible it is. There are so many ways to adjust this recipe to suit your mood, the time of year, or whatever happens to be in your pantry. If you’re looking to add some extra crunch to your breakfast bars, I recommend tossing in a handful of chopped nuts or seeds. To adjust the flavor profile of this recipe, you can also experiment with adding different spices or spice combinations. Nutmeg, pumpkin pie spice, and ginger would all make excellent additions to this recipe. Looking to add extra sweetness to your bars? You might consider adding raisins, dried cranberries, or chopped dates to this recipe. And finally, you can also boost the protein content of these breakfast bars with a couple of simple recipe tweaks. Stir in a scoop of your favorite protein powder or nut butter. With endless possibilities for customization, these breakfast bars are just the kind of dish you can make time and again!

How do I store leftovers?
Not only are these bars easy to make, but they also store beautifully! If you are left with any extra breakfast bars, place your leftovers in an airtight container. You can store them at room temperature for up to 3 days, or you can store them in the fridge for up to a week. If you’d like to store them longer, you can also freeze your leftover breakfast bars for as long as 3 months. Keep in mind that these bars may stick together during storage, so I recommend separating them with layers of parchment paper. You can enjoy your leftovers at room temperature, or you can microwave them for 10-15 seconds to soften the texture.

Serving suggestions
If you’re enjoying these breakfast bars as part of a balanced breakfast, I recommend serving them alongside or crumbled over a bowl of Strawberry Yogurt or this Crock-Pot Yogurt. Serving your breakfast bars as a standalone snack? Then I suggest pairing them with a refreshing beverage like a Strawberry Matcha Latte or a Pumpkin Spice Latte. I also recommend incorporating these bars into an ever-so-slightly healthier dessert. You could crumble your breakfast bars over a bowl of this Healthy Ice Cream, or you could also try turning a couple of bars into a delectable ice cream sandwich!
