Avocado toast is one of my go-tos. It’s easy to make, healthy, and provides lots of fuel. However, I try to limit the amount of bread I consume. If I do indulge in a slice or two, I try to fit it into my diet at the start of my day. I figure I have the rest of the day to burn it off. And if I’m going to have bread, I should pair it with some delectable and healthy options. Enter: this recipe. With its inclusion of salmon, tomatoes, onion, egg, or bacon, it turns my favorite breakfast into a veritable dinner feast.

Are Avocado Toast Toppings Healthy?

I prepare my avocado toast using whole grain bread. Whole-grain foods are a healthier choice and provide fiber, vitamins, minerals, and other nutrients. Whole-grain bread is the way to go because it does not include bleached flour, which is not so great for you due to the chemicals that are often used to whiten flour.

Next is the second-most important ingredient in this recipe: the avocado. They are a great source of vitamins C, E, K, and B6, as well as magnesium and potassium. They also provide lutein, beta carotene, and omega-3 fatty acids. I love avocados for the nutrients they provide as well as their creamy, satisfying texture.

No Avocados on Hand?

The creamy texture from the avocado really makes a difference, but if you don’t have any on hand (or the ones you do have aren’t ripe), mix olive oil with coconut oil and spread this on your toast. The result is a creamy base full of flavor (though, admittedly, with fewer nutrients). From there, you can continue to add your crispy bacon, chives, scrambled egg, and tomatoes.

There have been many times when I didn’t have what I needed in my kitchen, and it forced me to get creative. Give this variation a try and top with my personal favorite, an heirloom tomato, and see how it goes.

How do I prep and store these toppings?

To prep, you can toast the bread in advance and store it in an airtight container. However, consider re-toasting it briefly before serving to crisp it up again.
Next, prepare the avocado by mashing it with salt and storing it in an airtight container in the refrigerator. To prevent browning, press a piece of plastic wrap directly onto the surface of the avocado mixture. If you plan to use additional toppings, slice and store them in separate containers in the refrigerator. When ready to serve, simply re-toast, spread and top.

Serving Suggestions

Did the heirloom tomatoes do it for you? Or did you continue the flow and add mashed roasted peas, and a thinly sliced protein? Or was it the added sprouts or microgreens? With endless variations and ways to serve, you’ve got a lot of room for experimentation. Ingredients

  • 1 slice whole grain bread
  • 1/2 ripe avocado
  • 1 teaspoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup cherry tomatoes halved
  • 2 slices smoked salmon
  • 2 tablespoons red onion thinly sliced
  • 1 scrambled egg
  • 2 slices crispy bacon
  • 2 tablespoons goat cheese crumbled
  • 1 teaspoon chives chopped

Instructions

  • Toast the bread slice to your preferred level of crispiness.

  • Mash the avocado with lemon juice, salt, and pepper, then spread evenly on the toasted bread.
