As a modern fusion of American and Japanese cuisine, avocado sushi has become one of the most coveted rolls on the menu. But did you know that it only takes 15 minutes to create at home? All you need is nori, cooked sushi rice, ripe avocados, sesame seeds, and some accompaniments like wasabi and ginger. The final product is a yummy homemade roll that can satisfy your sushi cravings. Since avocado is rich in healthy fats, fiber, and vitamins, an avocado sushi roll is quite nutritious. If you want a lower-carb rice, consider swapping in brown sushi rice instead of white sushi rice.

A History Of Avocado In Sushi

Avocado is not a traditional ingredient for Japanese sushi, however, it has become a hallmark of modern American-influenced sushi across the world. Avocado was first incorporated into sushi with the invention of the California roll, an American spin on the traditional sushi roll. Sometime around the 1960s, creamy avocado was chosen as an excellent complement to imitation crab. While some say the roll was invented in Los Angeles, others say it came from Vancouver, Canada. Since then, sushi chefs have continued to experiment with avocado in sushi, later creating this fresh and vegan-friendly avocado sushi roll, an easy and delectable dish for sushi lovers.

How do I store leftovers?

Once assembled, avocado sushi can be stored in an airtight container and refrigerated for up to 2 days. When you’re ready to enjoy, eat it cold and fresh from the fridge. I don’t recommend freezing it because thawing might ruin the avocado.

Serving Suggestions

Avocado sushi rolls can be enjoyed next to other similar rolls, like Cucumber Roll and Spicy Kani Roll, if you want to include fish. Ingredients

  • 2 nori sheets
  • 2 1/2 cups sushi rice cooked, seasoned, and cooled to room temperature
  • 2 ripe avocados cut into 1/2-inch slices
  • 1 tablespoon roasted sesame seeds
  • Soy sauce for serving
  • Wasabi for serving
  • Pickled ginger for serving

Instructions

  • Place a nori sheet on a bamboo mat, spread a thin layer of sushi rice on the nori, leaving a small space at the top.

  • Flip the nori so the rice is facing down and place avocado slices in the center. Roll the sushi tightly using the bamboo mat.
