Craving a quick and easy veggie alternative to burgers or steak? Air-fryer portobello mushrooms are juicy, hearty, and flavorful—a lot like your typical BBQ meats. The one difference is that you don’t need to cook out to experience it. With a handy air fryer, these beautifully browned caps are complete in no time—in the comfort of your own kitchen, nonetheless.

How is it possible? Well, the air fryer works like a tiny convection oven, but with even more concentrated power. It circulates hot air to rapidly cook food, leaving the outsides crispy with moist and tender insides. Say “goodbye” to classic frying methods full of grease that take a long time. Air-fryer portobello mushrooms save time and calories, without losing any good taste. Cooked to crisp perfection, these portobello mushrooms are a testament to that.

When I have my own home, one of the first kitchen appliances I’ll buy is an air fryer. It’s not just a worthy investment for myself, but for anyone who comes over with a craving for fried food. With this tool, greasy takeout is out, and healthy fried veggies are in! One scrumptious bite of air-fryer portobello mushrooms will help you see what I mean.

The magic of portobello mushrooms

Also known as the “cultivated mushroom” or “agaricus bisporus,” the portobello mushroom has been cultivated in more than 70 countries around the world. It’s so common that now there are hundreds of recipes that use it one way or another. Why? Probably because it’s easy to grow, full of flavor, and has the perfect texture for soaking up all kinds of yummy seasonings. It’s almost meaty, which is why it’s an ideal alternative for both vegans and vegetarians.

How do I store leftovers?

Once cooled to room temperature, leftover portobello mushrooms can be placed in a large airtight container for 3-4 days. Enjoy them as soon as possible to avoid them getting wrinkled or soggy. Reheat them in the air fryer or oven at 350°F for about 5 minutes.

Serving suggestions

Once your air fryer portobello mushrooms have been topped with fresh parsley, there are a few ways you can savor them. While you can use them as burger alternatives, you can also pull out the stems completely and use them as burger buns. Try them with Salmon Burgers or Falafel Burgers, for example.

For a simpler approach, serve them with Smashed Potatoes, Coconut Rice, Asparagus Risotto, or Pasta With Peas. Personally, I like to top each portobello mushroom with Pickled Peppers and a scoop of Quinoa Chickpea Salad or Quinoa Fried Rice, but the choice is yours.

Ingredients

  • 2 medium portobello mushroom caps
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon low-sodium soy sauce
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Kosher salt to taste
  • Fresh parsley chopped, for garnish

Instructions

  • Rinse the portobello mushroom caps and pat them dry with a clean towel.
  • In a small bowl, mix Worcestershire sauce, soy sauce, olive oil, garlic powder, onion powder, and salt until well combined.

  • Using a basting brush, brush the marinade over both sides of the mushrooms. Lightly spray the air fryer basket with olive oil.

  • Place the mushrooms gill side-up in a single layer and air fry at 400°F for 5 minutes.
