Though the eggs, sausage, and cheese add protein, these ingredients also make the quiche high in fat. You could use low-fat cheese and skimmed milk, however. For a meat-free option, a simple swap for vegetarian sausage (or using sautéed mushrooms instead) works beautifully. Just remember to drain any excess moisture from your veggies before adding them to the filling.

If you’re worried about a soggy bottom (the nemesis of all quiche makers), consider blind baking your crust. To do this, simply crumple a piece of parchment paper, place it on the crust, put some pie weights or dried beans on the paper, and bake the crust for about 10 minutes. Remove the paper and weights or beans, and add the filling. This little extra step ensures the base holds up beautifully under the rich egg custard.

How To Make Ahead And Store

Bake your quiche as directed. Once completely cooled, wrap it tightly in plastic wrap or aluminum foil and store it in the fridge for 3-5 days. To freeze, assemble the quiche, but don’t bake it. Wrap it well and freeze for up to a month. When ready to use, bake directly from frozen, adding about 10-15 minutes to the cooking time.

Ingredients

  • 1 uncooked pie crust
  • 3/4 pound sausage crumbled
  • 1/2 small yellow onion diced
  • 1 1/2 cups shredded sharp cheddar cheese
  • 4 large eggs
  • 1 cup half-and-half or whole milk
  • 1/2 teaspoon dry mustard
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F.
  • Fit the pie crust into a 9-inch pie pan, pressing it firmly against the sides and bottom. Parbake the crust if desired.
  • Heat a skillet to medium. Crumble the sausage into the skillet and add the onions, stirring until the sausage is browned and the onions have softened and released their moisture. Drain off any fat or moisture, and pat the cooked mixture with paper towel to remove any remaining liquid.

  • Evenly distribute the cooked sausage and onions over the crust. Then evenly sprinkle the cheese over the sausage and onions.
  • In a mixing bowl, whisk together the eggs, half-and-half (or milk), dry mustard, salt, and pepper until well combined.
