This classically creamy Italian rice dish cooks up fast for a versatile and delicious complement to any weeknight dinner.

The first time I ate white rice was at a friend’s house when I was six, as an after-school snack. My friend’s family was Japanese-American, and I remember them having a special appliance for making rice. When my friend’s mom opened the rice cooker, a cloud of steam wafted out. It smelled delightfully warm and earthy. I was used to other starches, like pasta and potatoes, so a bowl of white rice topped with butter and salt was a new experience for me. Since that day, I have loved rice in all its forms—and this risotto recipe is a favorite.

The first time I made it, I was nervous about the constant stirring and careful attention required to ensure the texture came out just right. But after a few tries, I found the process enjoyable—it’s become a kind of meditation. Every step is a chance to appreciate each ingredient as the aromas of onion, garlic, broth, and white wine fill my apartment. And you simply cannot beat the creaminess of risotto! That silky texture paired with rich, savory flavors makes this dish the ultimate comfort food.

I typically make risotto for special occasions, like date night or my gluten-free niece’s birthday, pairing it with grilled fish and a green salad. But it’s quick and easy enough to elevate any weeknight dinner.

Is This Risotto Recipe Healthy?

This risotto recipe provides a good balance of carbs and protein, with some calcium, potassium, and some fiber. The arborio rice is the main source of carbs. The Parmesan cheese adds protein, calcium, and saturated fat, as well as sodium. Chicken broth adds more sodium, along with protein and potassium. The onion and garlic offer small amounts of fiber, vitamin C, and flavor with minimal calories, while the white wine adds flavor and a small amount of sugar. The parsley brings in vitamins A and C with a fresh flavor boost. Olive oil provides heart-healthy monounsaturated fats, and butter adds saturated fat. Overall, this dish is moderately high in calories, saturated fat, and carbs, so it’s best enjoyed with mindful portion control alongside some lean protein and veggie-rich sides.

Arborio rice is not derived from wheat, barley, or rye—making this a naturally gluten-free recipe. Those watching their saturated fat intake could skip the added butter and add less cheese, though the dish will have less richness. For a vegetarian-friendly version, sub in vegetable broth for the chicken broth. Make it vegan by using vegetable broth, skipping the dairy, and opting for plant-based butter and a Parmesan alternative.

While the exact origin of risotto is uncertain, its roots trace back to northern Italy, particularly the fertile Po Valley. Rice was introduced to Italy by the Arabs during their occupation of Sicily in the Middle Ages. It flourished in the north, where the climate and landscape were ideal for cultivation. The first identifiable risotto recipe appeared in 1809 and featured rice sautéed in butter with sausage, onions, and saffron—sometimes also including bone marrow. Over time, the technique of slowly adding broth while stirring the rice became central to the dish, creating risotto’s signature creamy texture. Today, risotto comes in many variations, but this recipe honors the classic approach with simple flavors like Parmesan, onions, and garlic.

How Do I Store Leftovers?

While risotto is best enjoyed right away, you can store leftovers in an airtight container in the fridge for up to 3 days. You can also freeze it in a freezer-safe container for up to 3 months—but the texture will soften over time due to the breakdown of starches. Thaw overnight in the fridge. Reheat gently on the stovetop, adding a splash of broth or water to restore some creaminess.

Ingredients

  • 4 cups low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup arborio rice
  • 1/2 cup dry white wine
  • 1/2 cup Parmesan cheese grated
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • Fresh parsley chopped, for garnish

Instructions

  • In a saucepan, keep chicken broth warm over low heat.
  • In a separate large pan, heat the olive oil over medium heat. Add the onion and garlic. Sauté until the onion becomes translucent, about 5-7 minutes.

  • Add the arborio rice to the pan, stirring to coat with oil. Cook for 2 minutes, stirring occasionally.

  • Pour in the white wine. Cook and stir until the wine is mostly absorbed.
  • Add the warm broth one ladleful at a time, stirring continuously. Wait until each ladelful is fully absorbed before adding the next. Continue until the rice is creamy and al dente, about 20 minutes.
  • Stir in the Parmesan cheese and butter. Season with salt and pepper.
