Any time can be party time when you whip up a bowl of Pineapple Fluff!

Do you have a signature dish that your family and friends can count on you to bring to every gathering? If not, may I suggest pineapple fluff? Yes, I know I’ve shared other “fluff” recipes already, but I just have a bunch of these that I love to make. So, what makes this pineapple one so special? To be honest, I can’t tell you. Seriously, no one ingredient sets this apart from other versions. It’s just something about the combination of ingredients (and my love of shredded coconut) that makes this stand out as the perfect party dish.

While fluff recipes make the perfect no-bake dish for summer get-togethers, don’t for a minute think you can’t make them in the middle of a snowy winter. In fact, many people like to include a fluff salad on their holiday buffet tables alongside the sweet potatoes, turkey, and ham. Whenever you want to serve it, any fluff will make any meal better with its sweet flavor and creamy texture.

The nice thing about fluff salads is that you can add, change, or omit ingredients to customize them to your liking. For example, if you don’t like the texture of shredded coconut but love the flavor, you can use coconut cream instant pudding mix instead of vanilla. I sometimes add drained, canned fruit cocktail, which brings with it peaches, pears, pineapple, grapes, and cherries. If you want to add fruit cocktail, I recommend getting the one in 100% fruit juice to avoid added sugar. The fruit and this fluff recipe are sweet enough without extra sugar.

Other delicious add-ins for pineapple fluff include crushed pretzels, which add crunch and saltiness that give the dish a different dimension. Maraschino cherries, mandarin oranges, mini chocolate chips, fresh berries, and grapes are other great additions. You can also swap the mini marshmallows for the fruity, colorful variety.

Make an adults-only boozy fluff!

Let’s face it, parties are not just for kids. If you’re having an adults-only gathering, you can add some rum to this dessert and kick it up a notch. While I like coconut rum to enhance the piña colada taste, vanilla rum would also be good. So, how much rum should you add? While many other recipes call for 1 teaspoon of rum, I don’t stop there. Since you use crushed pineapple with its juice, you can take out 1-2 teaspoons of juice and replace it with more rum. Just don’t swap too much, or the flavor will be too strong and your guests won’t enjoy it. If you want the rum flavor without the actual rum, add a teaspoon of rum extract to the recipe.

How do I store leftovers?

Leftovers of pineapple fluff should be covered tightly with plastic wrap or stored in an airtight container in the refrigerator for up to 3 days. Since pineapple contains a lot of liquid, it breaks down the fluff quickly. Don’t be surprised if you find liquid at the bottom of the bowl. Give it a good mix right before serving. You can also freeze leftover fluff in a freezer-safe container, but the consistency will change a bit; it will still taste good. Defrost it overnight in the refrigerator and stir well before serving.

Serving suggestions

Serve pineapple fluff with your favorite holiday spread of dishes like Air-Fryer Turkey Breast, Ham Pot Pie, Sweet Potato Casserole With Marshmallows (you can never have enough marshmallows), and Healthy Green Bean Casserole. Since this dish is also a summertime staple, you can serve it with a chilled meal of Fennel-Apple Salad, Southwest Quinoa Salad, this Crab Pasta Salad Recipe, and a delicious Ciabatta Sandwich. Add some Coconut Cookies or Pineapple Sunshine Cake, which complement the fluff flavors, and enjoy.

Ingredients

  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 can (20 ounces) crushed pineapple, with juice, undrained
  • 1 tub (8 ounces) whipped topping, thawed
  • 2 cups mini marshmallows
  • 3/4 cup shredded sweetened coconut
  • Maraschino cherries, chopped (for optional garnish)
  • Pecans or walnuts, chopped (for optional garnish)

Instructions

  • In a bowl, mix instant vanilla pudding with crushed pineapple and its juice until smooth.

  • Carefully fold in the whipped topping, mini marshmallows, and shredded sweetened coconut until well combined.

  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving. Garnish with chopped cherries or nuts before serving if desired.
