Turn one of summer’s sweetest fruits into a delicious, flavor-packed dish with this Peach Burrata Salad that will delight everyone who tries it.

Although I enjoy eating salads any time of year, there is something about the arrival of warm weather season that just calls for the cool, crisp bite of fresh fruit. Some of my favorite summer salads contain fruit, especially ripe summer berries. But this peach burrata salad is also pretty high on my list—especially when you catch peaches at that perfect point, when they have fully ripened but haven’t become soft or mushy yet.

Burrata is such a decadent cheese. I first had it in Italy a few years ago when on a trip with my daughter. When you cut it open, and all that creamy goodness oozes out, it’s a feast for your eyes before it becomes a delight for your taste buds. If you serve this salad to guests, you might want to keep the burrata whole so each person can cut it open and experience the visual sensation themselves.

You can also use nectarines instead of peaches to make this salad, or a combination of the two. Feel free to also toss in any berries or nuts that you have on hand, as they are a great addition to the dish. Walnuts are my personal favorite, and candying or roasting them brings out such an incredible flavor that goes beautifully with the creamy burrata, sweet and juicy peaches, and tangy balsamic glaze.

Is Peach Burrata Salad Healthy?

Peach burrata salad contains protein, calcium, fiber, and other nutrients while being fairly low in sodium. Although pine nuts may seem tiny, they are a good source of iron and magnesium. Keep in mind, though, that burrata is mozzarella cheese wrapped around curds and cream, making it high in fat. Therefore, folks who are watching their fat intake may want to limit their portion. Without the crostini, this salad is naturally gluten-free. Be careful when selecting a balsamic glaze if you are gluten-free, as some brands contain gluten.

Save Time With Pre-Washed Salad Greens

I love convenience, so I buy packages of pre-washed salad greens like spring mix and baby spinach at the store. Since I use so much spinach in my cooking, I often go to the bulk warehouse stores, which offer great prices on large containers of organic greens. With these pre-washed greens, you can save significant time making this dish. It takes only a few seconds to open the container, grab a handful of lettuce leaves, and place them on a platter or bowl. Add your toppings, and voilà, instant meal. It’s perfect for those busy days when you have little time to prepare meals.

How do I store leftovers?

This salad is definitely best enjoyed fresh. While burrata itself can be stored up to 3 days in the fridge, once it’s combined with other salad ingredients, it’s best to consume it within a day or two. If you do store any leftovers, be sure to put them in an airtight container. Keep in mind that once you add dressing to salad greens, they can become soggy, and cut peaches often turn brown after 24 hours.

Serving Suggestions

This peach burrata salad makes the perfect summertime lunch or appetizer. You can even grill the peaches at your next BBQ to take this recipe to a whole new level. The salad will hold its own alongside Grilled London Broil, BBQ Pork Chops, or Grilled Cod. Add some Grilled Eggplant and this colorful Corn Salad for a delicious meal.

Ingredients

  • 2 1/2 cups mixed salad leaves
  • 2 large ripe peaches
  • 8 ounces burrata cheese at room temperature
  • 4 tablespoons pine nuts
  • Balsamic glaze for drizzling
  • Fresh basil leaves for garnish
  • Optional: crostini for serving

Instructions

  • Wash the lettuce and peaches in cool water, and then dry them with a kitchen towel.
  • Pit the peaches and slice them into wedges. Set aside.
    Ingredients for peach burrata salad: sliced peaches, burrata, basil.
  • Arrange the lettuce on a serving platter. Arrange the peach slices evenly on top of the greens. Tear the burrata into pieces and distribute them evenly over the salad. Sprinkle the pine nuts on top.

  • Drizzle balsamic glaze over the top, and garnish with fresh basil leaves. Serve immediately with crostini, if desired.
