Peach Burrata Salad with peaches, burrata, greens, pine nuts, basil, and crostini.

Ingredients

  • 2 1/2 cups mixed salad leaves
  • 2 large ripe peaches
  • 8 ounces burrata cheese at room temperature
  • 4 tablespoons pine nuts
  • Balsamic glaze for drizzling
  • Fresh basil leaves for garnish
  • Optional: crostini for serving

Instructions

  • Wash the lettuce and peaches in cool water, and then dry them with a kitchen towel.
  • Pit the peaches and slice them into wedges. Set aside.

  • Arrange the lettuce on a serving platter. Arrange the peach slices evenly on top of the greens. Tear the burrata into pieces and distribute them evenly over the salad. Sprinkle the pine nuts on top.

  • Drizzle balsamic glaze over the top, and garnish with fresh basil leaves. Serve immediately with crostini, if desired.
