When craving a salty, sweet snack, skip the junk food and grab one of these delicious, chewy Mixed Fruit And Nut Energy Bites.

For many years, I would hit the usual midday slump and reach for a bag of chips, chocolate-covered pretzels, or gummy bears. If you aren’t aware, this isn’t the right move. Junk food in the afternoon was a huge vice of mine until I realized my habit wasn’t doing me any favors in the energy department.

To keep up energy levels through the icky afternoon part of the day, we have to consume real nutrition, not sugary coffee drinks or energy shots, and not the empty carbs in potato chips and crackers. Nope—you need real food.

The ingredients in these mixed fruit and nut energy bites are real food. These delicious morsels contain apricots, coconut, raw almonds, cranberries, and pumpkin seeds to pump up the protein and healthy fats, which will keep you going past that awful 3pm desert of motivation. You’ll be surprised by how peppy you feel after one or two of these energy bites. And it helps that they’re really tasty.

Fun swaps and variations

There are tons of recipes for energy bites on the internet, and I’ve tried a lot of them. I’ve learned that you can mix and match a lot of different ingredients according to your taste. For example, I like adding in a spoonful of peanut butter or almond butter, swapping the cranberries for golden raisins, and tossing in a handful of dark chocolate chunks. You can also add things like sunflower seeds, dried oranges, dried cherries, hazelnuts, peanuts, or yogurt chips. Just make sure you don’t add anything too moist or liquidy, as the balls might not hold together if they’re too wet.

How do I store leftovers?

You can store energy bites in an airtight container at room temperature for up to 2 days, but I prefer storing them in the refrigerator, where they will last for up to a week. For extended storage, transfer them to a freezer-safe container or bag and stash them in the freezer for up to 3 months.

Serving suggestions

Energy bites are great any time of day, so keep them on hand for a quick snack. They also are the perfect complement to breakfast. Add a couple of energy bites to the plate alongside a high-protein breakfast like Hard-Boiled Eggs or Scrambled Egg Whites, and you will be full of energy for the day. 

To help me push through that slumpy time of day, I enjoy an energy bite with lunch, especially after my favorite Avocado Chicken Salad or a light Mediterranean Cucumber Salad. I tend to crave something sweet after my midday meal, and the energy bite feels like dessert while giving me the spark I need.

Ingredients

  • ½ cup raw almonds
  • 1 cup dried apricots
  • 1 cup dried cranberries
  • ½ cup pumpkin seeds
  • ¾ cup shredded coconut divided
  • ¼ teaspoon ground cinnamon
  • 1 pinch salt

Instructions

  • Add the almonds and apricots into the food processor and blend until it forms a coarse crumb.

  • Add in the cranberries, pumpkin seeds, ½ cup coconut, cinnamon, and salt, then blend until it forms a fine crumb.

  • Use your hands to break off pieces and roll them into balls.

  • Roll the balls in the remaining shredded coconut until coated. Place the balls on a cookie sheet and refrigerate for 10 minutes until firm.
