After a long workday, the last thing I want to do is think about making dinner. We’ve all had those draining days filled with back-to-back meetings, constant phone calls, and lengthy commutes. That’s when I turn to simple one-pan meals like kielbasa and potatoes—it’s a quick, simple, and satisfying dish. All you have to do is slice up the kielbasa, prep the veggies, and fire up the skillet. It’s super easy to clean up, and if you always keep a kielbasa in the freezer, like I do, this recipe is truly a lifesaver. 

Not only is this recipe incredibly easy to make, but it is also absolutely delicious. Years ago, my family briefly lived in Detroit’s Polish neighborhood, Poletown East. We were surrounded by amazing butchers selling fresh Polish sausage. My mom would pick up a few kielbasa sausages, a bag of potatoes, and a large jar of sauerkraut and cook up a feast. Pro tip: follow my mom’s lead and make sure to get a nice golden-brown crust on that kielbasa for extra flavor. Whenever I’m feeling nostalgic for our time in Poletown East, I make this recipe.

What even is kielbasa?

For those of you who don’t know, kielbasa is just the Polish word for sausage. In the United States, kielbasa refers to a type of sausage that’s typically smoked and has a U-shaped appearance. Kielbasa sold in the United States generally uses ground pork and has a bright reddish-orange color. Traditionally, sausage in Poland isn’t smoked.

In Poland, kielbasa refers to a variety of fresh and cured sausages, often made with coarser-ground meat and featuring different seasonings, such as garlic and marjoram. The smoking process that defines American kielbasa was adapted by European immigrants who brought their preservation techniques to the United States.

How do I store leftovers?

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to 2 months. To defrost, I recommend thawing in the fridge overnight.

Reheat it in a skillet over medium-low heat, adding a splash of olive oil or chicken stock to prevent it from drying out. Stir for 5-8 minutes or until heated through. You can also reheat it in the oven. Cover the skillet with a lid or foil, add a tablespoon of liquid, and bake at 350°F for 15-20 minutes.

Serving suggestions

While this kielbasa and potatoes recipe is amazing on its own, it’s even better when paired with an array of veggie side dishes, like this simple Steamed Brussels Sprouts recipe. Ingredients

  • 3 tablespoons olive oil divided
  • 1 pound kielbasa sausage sliced into 1/2-inch rounds
  • 1 1/2 pounds baby red potatoes quartered
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 cup chicken stock
  • 1 cup onion sliced
  • 1 cup bell pepper sliced
  • 3 cloves garlic minced
  • Fresh parsley chopped, for garnish

Instructions

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the kielbasa slices and cook until browned on both sides, about 3 to 4 minutes per side. Transfer the browned kielbasa to a plate and set aside.

  • In the same skillet, add the remaining 2 tablespoons of olive oil. Add the quartered potatoes and season with kosher salt, black pepper, Italian seasoning, and paprika.

  • Lower the heat to medium-low, cover, and cook for about 15 minutes, stirring occasionally, until the potatoes begin to soften. If they start to stick, add a little stock to deglaze the pan. After 15 minutes, pour in all the chicken stock and allow the potatoes to continue cooking until most of the liquid has evaporated.

  • Add the sliced onion, bell pepper, and minced garlic. Cover and cook for an additional 5 minutes until the vegetables are tender.

  • Return the browned kielbasa to the skillet. Taste and adjust the seasoning if needed, then serve immediately, garnished with fresh parsley.
