Are Hasselback Sweet Potatoes Healthy?

The chopsticks or spoons act as a barrier so you don’t accidentally cut all the way through the potato. A sharp knife helps, too—dull blades and the tough skin of sweet potatoes do not mix.

Leftovers can be kept tightly sealed in the fridge for 2-3 days and then reheated. To reheat, bake at 375 degrees Fahrenheit for 10-15 minutes, or until heated through.

Hasselback sweet potatoes can practically be a meal by themselves, especially with added toppings. If you are going to serve them alongside other dishes, you may want to choose smaller-sized spuds. They pair well with Lemon-Roasted Chicken, a Grilled Romaine Salad, and Pan-Seared Salmon.


Ingredients
- 4 medium sweet potatoes scrubbed
- 2 tablespoons unsalted butter melted
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme finely chopped
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley finely chopped
Instructions
- Preheat your oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
- Carefully make thin slices along each sweet potato, stopping just before you cut through so that the slices stay connected at the bottom.

- Mix the melted butter, olive oil, thyme, salt, and pepper, and brush the mixture over and between the slices of each sweet potato.

- Bake for about 60 minutes, until the potatoes are tender inside and crispy on the outside.

- Remove from the oven, sprinkle with Parmesan cheese and parsley, and serve.
