These Grilled Brussels Sprout skewers are a deliciously healthy and creative way to cook an often overlooked veggie.

I used to hate Brussels sprouts. I thought they tasted bitter, but it turns out, I just didn’t know how to make them. In fact, these little green balls of goodness are delicious and totally versatile. Think boiling them is the only way to go? Think again! I love to stir-fry them, shred them and add them to salads or coleslaw, and even grill them. These grilled Brussels sprouts are my new favorite side. They’re ridiculously simple to make and a real crowd-pleaser. My four-year-old son, who isn’t too fond of anything green (understatement) gobbles these up and comes back for seconds.

When grilled, these Brussels sprouts are savory and with just a hint of sweetness and tang complemented by the zest of garlic and mustard. And, of course, the grilling process adds a smokiness, leaving the Brussels sprouts crispy on the outside and tender on the inside. Trust me, after trying this recipe, Brussels sprouts might just become your favorite vegetable!

Are Grilled Brussels Sprouts Healthy?

Brussels sprouts are a nutritional powerhouse. They’re loaded with fiber and are low in carbs. What’s more, just one cup of Brussels sprouts meets the daily recommendation for vitamin C. You really can’t go wrong with this veggie. However, this recipe does contain soy sauce. If you’re watching your sodium intake, you could use coconut aminos instead.

The Art Of Marinating 

When it comes to meats, marinades are discussed ad nauseam, but what about vegetables? I’d argue that marinating veggies is just as important. Marinades transform simple vegetables, elevating their flavor. The marinade for this grilled Brussels sprouts recipe is a savory blend of balsamic vinegar, Dijon mustard, minced garlic, and soy sauce. This mix infuses the Brussels sprouts with umami, enhancing their naturally earthy flavor.

While the recipe doesn’t call for it, marinating for as long as possible is never a bad idea. Also, this marinade doesn’t use white vinegar or citrus juices, so you could ideally soak your Brussels sprouts for a few hours without worrying they’ll turn to mush. The longer marination time lets the mixture penetrate more deeply into the sprouts, making them tender and more flavorful. Even better, the exterior of the sprouts will caramelize beautifully under the grill’s high heat.

How Do I Store Leftovers?

While these taste best freshly made, they can be stored in the fridge for up to 4 days. They’re actually pretty good cold, too. I like to top salads with them.

Ingredients

  • 1 pound Brussels sprouts uniform in size
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce or tamari, for gluten-free option
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Soak wooden skewers in water for at least 1 hour to prevent burning if using; metal skewers do not require soaking.
  • Trim and clean the Brussels sprouts, then microwave them for 3 minutes to soften. Allow to cool.

  • Preheat the grill to medium heat (around 375°F) or prepare a grill pan or oven broiler.
  • In a bowl, combine Brussels sprouts with olive oil, garlic, soy sauce, balsamic vinegar, mustard, salt, and pepper, tossing to coat.

  • Thread Brussels sprouts onto skewers, grouping similar sizes together for even cooking. Reserve marinade for later use.

  • Grill skewers for 5 minutes, then flip and grill for another 5 minutes, until sprouts are browned and tender.

  • Remove Brussels sprouts from skewers, toss with reserved marinade, and serve.
