These meatballs are so good, no one will guess they’re gluten-free.

Store leftover meatballs in an airtight container in the fridge for up to 3 days. To freeze, let them cool completely, freeze on a baking sheet, then transfer to a zip-top bag or freezer-safe container. They’ll keep well in the freezer for up to 2 months.

Ingredients

  • 1 pound lean ground beef
  • ½ cup gluten-free breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons fresh parsley finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried oregano

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Place all of the ingredients into a large bowl. Mix until just combined, being careful not to overwork the meat.
