A simple and sweet brunch for singles or just lovers of alone time.

One of my favorite parts of cooking is getting to share the food with others, but sometimes it’s just little ol’ me in my pajamas and an apron. On mornings like this, I like to treat myself with a quick and easy French toast for one.

This recipe takes fifteen minutes or less, and the result is two fluffy, scrumptious slices of golden brown goodness. Whether you’re fully self-partnered or just want a midnight snack to yourself, this decadent French toast is the way to go.

While I prefer to make mine with gluten-free bread, this recipe calls for classic challah or brioche, which are thick enough to soak up a lot of flavor and moisture in the best way.

When you’ve got a sweet tooth and some alone time on your hands, this recipe is perfect to play with. It’s got unlimited topping options, and you get the traditional French toast flavors of cinnamon and vanilla all to yourself!

My Gluten-Free Pumpkin Spice Version

If you’ve read some of my other recipes, you’ll know that I love to experiment in the kitchen. The last time I made solo French toast, it turned out to be so decadent and delicious. Here’s how I did it…

As I said, I prefer to use gluten-free bread. Of course, it’s also the pumpkin spice blend that takes the cake (or in this case, the toast)! Alongside a quarter teaspoon of cinnamon, I like to add the same amount of allspice, cardamom, ginger, and a pinch of cloves.

You’d be surprised by how a little spice goes a long way! If you really want to get experimental, you can also add an eighth of a cup of puréed pumpkin to the egg mixture and turn your personal brunch into a fall festival.

How to make ahead and store

Since this French toast is a single serving, I’d be surprised if you have leftovers from this, but hey! I don’t judge… If you’re saving some for later, wrap it in plastic wrap or put it in an airtight container in the fridge. It’ll stay good for up to 4 days, but I suggest eating it sooner than that. The fresher, the better. You can also freeze it in a freezer-safe container for up to 1 month. Thaw in the fridge overnight if you go this route. Reheat in the oven at 350°F for about 8 to 10 minutes, flipping halfway through.

Serving Suggestions

Enjoy your solo French toast with a pat of butter, your favorite fruit, and a drizzle of maple syrup. I like to top mine with raw honey and melted coconut butter.

Pair it with a Chocolate Peanut Butter Banana Smoothie or a Quinoa Breakfast Bowl and you’ve got one sweet and simple brunch. For a hearty, savory option, serve it with Air Fryer Breakfast Sausage and Potatoes.

Ingredients

  • 1 large egg
  • 1/4 cup whole milk
  • 1 teaspoon brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 pinch ground cinnamon
  • 2 slices thick bread like brioche or challah
  • 1 tablespoon unsalted butter plus extra for serving (optional)
  • Maple syrup for serving

Instructions

  • In a shallow dish, whisk together the egg, milk, vanilla extract, brown sugar, and cinnamon until well combined.

  • Dip each slice of bread into the egg mixture, allowing each side to soak for a few seconds.

  • Heat a skillet over medium heat and melt the butter.

  • Add the soaked bread slices to the skillet and cook until golden brown on each side, about 2 to 4 minutes per side. Try not to disturb the French toast too much while it cooks.
