Craving something sweet? I’ve got you. Looking to impress your guests? I’ve got you. Want to amp up your baking game? Y’all, I’ve got you. This recipe for crème brûlée cookies is easy, gourmet, and about to earn me major brownie points (or should I say “cookie points”?) with my man! 

My anniversary is coming up, but we’re in the middle of moving, so we’ve decided to skip the big festivities, romantic getaways, and expensive gifts this year. But I couldn’t do nothing, so I’ve been leaning on my friends at FFF to help me come up with a grand, romantic night of cooking at home. My boyfriend’s favorite dessert is crème brûlée, but his mom is a baker, so I’m not about to try to one-up her original recipe. Instead, I found these crème brûlée cookies, to put my personal touch on a dish that means so much to my partner. The best part is, they’re super easy to make! Good thing too, because unlike my future MIL, I am no baker.

That’s what I love about this recipe. Whether you’re an aspiring, avid, or amateur baker, you can and should make these crème brûlée cookies! The recipe is simple enough to bring to life, yet the cookies seem super impressive, with the signature torched topping of a classic crème brûlée, and all the staple pantry ingredients of your average cookie. 

Are Crème Brûlée Cookies Healthy?

Let’s be honest, no one is making crème brûlée cookies for the health benefits. But that doesn’t mean you can’t make healthy choices to improve the dish! Try using coconut sugar instead of granulated sugar (Big Tree Farms’ Golden Coconut Sugar is a perfect 1:1 substitute with a caramel taste!) and organic, unbleached flour.

What Is Crème Brûlée?

If you’ve never had crème brûlée… well, first of all, I’m sorry. You should definitely try crème brûlée as soon as possible. Crème brûlée is a French dessert made of baked custard, with a caramelized sugar layer on top. The name actually translates to “burnt cream”, but crème brûlée sounds much more appetizing, don’t you think?

Crème brûlée is delicious, but the pleasure really comes from that first crack of the sugary top layer. Underneath a glass-like shell lies a creamy, decadent custard, and the two textures pair perfectly. These crème brûlée cookies have a similar effect! After biting into a crunchy caramelized topping, you’re met with a warm, soft cookie center. Yum.

How do I store leftovers?

These crème brûlée cookies are best enjoyed right away, because over time, the sugary top layer can soften on the custard topping. If you’re not going to serve and eat your cookies immediately, wait until you are to add the topping and torch. Store cookies in an airtight container in the fridge until you’re ready to do so.

Serving Suggestions

I’m making these crème brûlée cookies as the dessert for my anniversary dinner at home. Also on the menu? A starter of mini Crab Cakes and Caprese Salad, followed by Homemade Pasta with Mushroom Sauce, Rosemary Chicken, and my boyfriend’s favorite Crispy Asparagus. He also loves an Old Fashioned, so I’m using this recipe to make the perfect pre-dinner drink!

Ingredients

  • 1 cup unsalted butter softened
  • 1/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 3/4 cup vanilla custard for topping
  • 1/3 cup granulated sugar for topping

Instructions

  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

  • Beat in the eggs one at a time, then stir in the vanilla extract.

  • In a separate bowl, whisk together the all-purpose flour, salt, and baking powder.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  • Scoop the dough onto a lined baking sheet, spacing them about 2 inches apart.

  • Bake in a preheated oven at 375°F for about 10 minutes or until the edges are golden.

  • Once cooled, top each cookie with a spoonful of vanilla custard. Sprinkle a thin layer of granulated sugar over the custard and use a kitchen torch to caramelize the sugar until golden and crispy.
