Ingredients
- 1 cup unsalted butter softened
- 1/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1/4 teaspoon salt
- 2 1/2 teaspoons baking powder
- 3/4 cup vanilla custard for topping
- 1/3 cup granulated sugar for topping
Instructions
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

- Beat in the eggs one at a time, then stir in the vanilla extract.

- In a separate bowl, whisk together the all-purpose flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

- Scoop the dough onto a lined baking sheet, spacing them about 2 inches apart.

- Bake in a preheated oven at 375°F for about 10 minutes or until the edges are golden.

- Once cooled, top each cookie with a spoonful of vanilla custard. Sprinkle a thin layer of granulated sugar over the custard and use a kitchen torch to caramelize the sugar until golden and crispy.
