With its rich filling and sweet cornbread base, this Cheesy Corn Casserole is comfort food that’s impossible to resist.

Cheesy Corn Casserole

If macaroni and cheese and cornbread had a delicious love child, this cheesy corn casserole would be it. Sweet corn kernels and tangy sour cream mingle with savory cheese and buttery corn muffin mix to create a dish that’s just as welcome on a summer potluck table as it is on a Thanksgiving spread.

In our house, this casserole became a favorite almost by accident. I was “assigned” a Thanksgiving side dish during the middle of a hectic move—boxes everywhere, no idea where my baking dishes were (I ended up using a disposable aluminum pan!)—and needed something fast, foolproof, and crowd-pleasing. This cheesy corn casserole checked every box. It came together in minutes, baked like a dream, and stole the show that night. Now? It’s a regular request, holidays or not.

Beyond being totally crave-worthy, it’s a breeze to mix and bake—no special skills or equipment needed, and perfect for letting little hands help out in the kitchen. While it’s great straight from the oven, it’s just as good heated up the next day (if there’s any left). It leans sweet and savory, with a gooey texture reminiscent of cornbread pudding. Want to amp it up? Stir in chopped jalapeños or sprinkle with crispy bacon for a personalized touch.

Is This Cheesy Corn Casserole Healthy?

Made with generous amounts of sour cream and cheese, this casserole is pretty indulgent and best enjoyed in moderation. That said, there are plenty of ways to make it work for your needs. Swap in a gluten-free corn muffin mix if you’re sensitive to gluten, and opt for brands with minimal added sugar or preservatives. Dairy-free? You’re covered—plant-based cheese alternatives like Daiya or Violife melt beautifully, and a flax egg or commercial egg replacer will bind the mix just as well. Want a little nutritional boost? Try topping with nutritional yeast for a savory finish and extra depth of flavor.

Why You’ll Love This Casserole

The beauty of Cheesy Corn Casserole is its simplicity. You stir everything together in one bowl, pour it into a pan, and bake. That’s it. No extra dishes. No tricky timing. And no complaints from picky eaters.

Its flavor profile is also incredibly flexible. Think of the basic recipe as a canvas—add green chiles for heat, chives for freshness, or a few spoonfuls of pesto for something totally unexpected. Whether you serve it as a cozy side dish or the centerpiece of a meal, it always satisfies.

How Do I Store Leftovers?

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, bake at 350°F for about 10 minutes. For a crispier top, broil for the last 2–3 minutes, but keep a close eye to prevent burning.

Serving Suggestions

This casserole plays nicely with a variety of dishes. Try pairing it with Air-Fryer BBQ Chicken for a smoky-sweet combo or with this delicious Thanksgiving Salad for a crunchy, fresh contrast. If you’re serving this cheesy corn casserole as part of a holiday spread, some other good sides to go along with it are Green Beans With Almonds or Roasted Beets And Carrots.
