Craft this classic, crispy side dish for almost any kind of main.

I once had a friend who often said, “It’s not easy to get in my green veggies; I don’t know how to cook them in a way that tastes good.” Well, this easy-peasy recipe is here to help her and anyone else with that problem. In just half an hour, plain broccoli becomes garlicky, tender, and perfectly charred on the outside. But the char doesn’t taste like burnt food. Rather, it’s a dark and rich caramelization that transforms the whole dish and sets it well apart from boring boiled florets. With just the right amount of crunchiness, this dish is bound to satisfy your appetite and balance your meal.

I’m especially fond of how the garlic and lemon play off each other in this recipe, creating a harmony of earthy and zesty flavors with every delicious bite. When I serve this to my loved ones, the people who usually complain about greens are astonished. “I didn’t know I could like broccoli this much!” I’ve heard them say, and it brings me joy every time.

The magic of broccoli and a little acidity

While this recipe calls for lemon zest, I prefer to also squeeze some lemon juice onto the broccoli for extra tanginess. The acidity of the lemon cancels out any lingering bitterness from the broccoli while complementing the rich caramelized flavors of the char. If you don’t have fresh lemons but want a similar taste, try sprinkling a couple tablespoons of apple cider vinegar over it instead.

How do I store leftovers?

Make sure your leftover charred broccoli is at room temperature before transferring it to an airtight container and refrigerating it. It will last like this for 2-3 days, or you can transfer it to a freezer-safe container and freeze it for up to 2 months. Thaw it in the fridge overnight and then reheat in the oven at 350°F for 5-10 minutes, until they’re crisp and sizzling again.

Serving suggestions

In my experience, charred broccoli pairs especially well with a hearty main dish like Steak And Potatoes or Balsamic-Glazed Salmon, but you can also use it as a topping for some vegetarian-friendly Quinoa Chickpea Salad. If you want to incorporate this dish into your weekend mornings, then serve these fancy florets with a Gluten-Free Quiche or Avocado Scrambled Eggs for a green and satisfying brunch.

Ingredients

  • 16 ounces broccoli florets trimmed to similar sizes
  • 5 garlic cloves peeled and chopped
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes optional
  • Zest of 1 lemon
  • Grated Parmesan cheese for serving (optional)

Instructions

  • Preheat your oven to 400°F. In a bowl, toss the broccoli and garlic with olive oil, salt, black pepper, onion powder, and red pepper flakes.
  • Spread the mixture in a single layer on a rimmed baking sheet and roast for 20 minutes, stirring halfway through until the edges are charred.
  • Remove from the oven, toss with lemon zest, and serve warm. Garnish with Parmesan if desired.
