By the end of my visit with her, I was juicing all kinds of produce. Apples, celery, and carrots, just to name a few. Carrot juice is especially delectable because, when mixed with orange and ginger, it creates a bright and tangy drink that’s perfect for summertime. It has just the right amount of sweetness, earthy spice, and refreshing citrus to pick me up no matter the time of day. And there’s no added sugar!
At the start of my juicing journey, I fantasized about doing a whole week of juice. Each day of the week would be a different color of the rainbow. This sunny beverage is perfect for a juice fast, but you can also make it whenever you’re feeling the need for a little refreshment. “But is it worth the effort?” you might ask.
Beautifully, the juicer does most of the work, leaving you to simply handle prep and cleanup. Who would’ve thought that juicing could be so fun and effortless? Once you get into it, it’s hard to give it up.

What do I do with carrot scraps?
When you use a juicer, you’ll notice that it collects the plant fibers to either be thrown out or repurposed. If you do throw them out, I suggest composting because it enriches the soil and lessens the amount of landfill contents. Believe it or not, there’s still a bit of nutrients in those carrot fibers, so alternatively, you can mix them up with some oil, salt, and pepper, then spread the mixture thinly onto a parchment-covered baking sheet. Bake in the oven at 400°F for 15-20 minutes, and you’ll have some nutritious and delicious carrot chips. You can also mix the carrot scraps into a soup or salad for extra fiber and flavor.

How do I store leftovers?
Although carrot juice is best enjoyed fresh, you can store it in a well-sealed jar and refrigerate it for 1-2 days afterward. For longer storage, transfer it to a freezer-safe container and freeze for up to 2 months. This is a game changer for anyone who doesn’t want to keep making juice constantly. If you store a large batch of it in portions in the freezer, you can take out a portion the night before you’ll use it and stick it in the fridge to thaw.

Serving suggestions
Sip on your carrot juice chilled with ice and garnished with an orange slice. In my experience, this vibrant little potion is best enjoyed in between meals, but you can also make it to complement a picnic lunch such as Cajun Burgers With Sweet Potato Buns, Pineapple Salad, and Baked Beans. It also goes harmoniously with a simple Green Salad or Vegan Avocado Toast.

- 1 pound carrots about 5 medium carrots
- 1 large orange peeled

Instructions
- Wash the carrots well. Peel the carrots if you like a smoother juice. Cut the carrots into pieces that fit your juicer.
