I’m not sure exactly when I stopped ordering Chinese takeout and started making my own stir-fry meals at home, but every time I cook a dish like beef chop suey, I’m glad I made the change. There’s something deeply satisfying about taking the time to make a meal yourself, especially when ordering takeout is such an easy option. More importantly, I love having control over the ingredients I use and the cooking process. For beef chop suey, I think of it as merely preparing the beef, veggies, and sauce separately, and then combining everything in one amazing stir-fry dish.

Of course, the true reward for cooking beef chop suey at home is eating it. This dish is perfect for anyone who enjoys combining beef and vegetables into one fragrant dish. The thin slices of beef come out so tender, while every bite has a different taste and texture thanks to the wide assortment of veggie-based add-ins.

Is Beef Chop Suey Healthy?

With so many colorful vegetables, beef chop suey has a strong nutritional profile. Vegetables like carrots, snow peas, bell peppers, and mushrooms each come with their own unique collection of vitamins, minerals and antioxidants. Meanwhile, beef sirloin comes with plenty of protein and iron. If you’re trying to be mindful of your sodium intake, both soy sauce and beef broth tend to be on the higher side. You can opt for a low-sodium soy sauce and beef broth if this is a concern.

Customize Your Veggies

Since this recipe includes half a dozen different types of vegetables, feel free to customize your choices based on your personal tastes. Try adding in broccoli and cabbage for instance, and if you prefer eating seasonally, using a variety of in-season vegetables will work here, too. I also suggest cutting the vegetables into small pieces, which makes them easier to eat alongside the thinly sliced beef. Bonus: Smaller bites of vegetables and beef mean that there’ll be more surface area to soak up the sauce.

How do I store leftovers?

Once cooled, store any leftover beef chop suey in an airtight container in the fridge. Consume any leftovers within 3 to 4 days. Reheat in a skillet on the stove over medium heat, or in a microwave until warmed through.

Serving Suggestions

Beef chop suey is typically served over white rice or noodles. I usually like to make classic Steamed Rice, but if white rice seems too bland, Vegetable Fried Rice also goes well with a stir-fry dish. Meanwhile, it’s never a bad idea to include another Chinese-American side dish or appetizer along with your chop suey. Beef Chop Suey

Ingredients

  • 3/4 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 1/2 tablespoons cornstarch
  • 1 1/2 tablespoons vegetable oil
  • 1 pound beef sirloin thinly sliced
  • 1 medium onion sliced
  • 2 stalks celery sliced
  • 1 large carrot julienned
  • 1 medium bell pepper sliced
  • 1 cup mushrooms sliced
  • 1 cup snow peas
  • 3 cloves garlic minced
  • 1/2 cup water chestnuts drained

Instructions

  • In a small bowl, whisk together beef broth, soy sauce, oyster sauce, and cornstarch until smooth. Set aside.

  • Heat vegetable oil in a large skillet over medium-high heat. Add sliced beef and stir-fry until browned, about 3-4 minutes. Remove beef from skillet and set aside.

  • In the same skillet, add onion, celery, carrot, bell pepper, mushrooms, and snow peas. Stir-fry until vegetables are tender-crisp, about 5-7 minutes. Add garlic and stir-fry for an additional minute.

  • Return the beef to the skillet. Add the prepared sauce and water chestnuts. Cook, stirring constantly, until the sauce is thickened and everything is heated through, about 2-3 minutes.
