It’s Friday evening and you’ve just arrived at your friend’s house. The afternoon was hectic and you forgot to eat lunch, so you make a beeline for the food spread. There’s an assortment of finger foods — little morsels of something or other atop sliced cucumber rounds, mini quiches, a platter of hummus, and a bouquet of purple carrots.

Suddenly, you’re stopped dead in your tracks. What could it be? It… resembles cockroaches? You turn to your friend, the host, and ask what you’re looking at.

Prosciutto-wrapped melon, step aside. Bacon-wrapped dates are a next-level finger food that combines a deeply smoky flavor with the sweet caramel-like taste of dates. Medjool dates, commonly called the “king of dates,” are known for their large size, rich flavor, and soft, chewy texture. Originally from North Africa, Medjool dates have been grown for thousands of years and were considered a crucial crop in ancient civilizations, and especially now in the Arabian Peninsula.

These days, they’re primarily cultivated in places with particularly dry and hot climates. In the U.S. they’re grown in Southern California and Arizona. Tunisia, Algeria, and the United Arab Emirates are among the world’s top producers and exporters of these dates. Medjool dates are used in a variety of dishes, including desserts and more savory recipes, and are considered one of the world’s oldest cultivated fruits.

How do I store leftovers?

Store your bacon-wrapped dates in an airtight container in the fridge for 3 to 5 days. Reheat in the oven at 350 degrees Fahrenheit and cook for 6–10 minutes until warm.

Ingredients

  • 10 slices bacon
  • 20 Medjool dates
  • 5 ounces goat cheese crumbled
  • Chopped cilantro or parsley for garnish optional

Instructions

  • Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  • Arrange the bacon strips next to each other on the baking sheet. Cook for roughly 10 minutes, until they are halfway cooked but remain flexible.

  • Meanwhile, make a lengthwise cut in each date to remove pits. Stuff each date with goat cheese and press to close.
