Complement any Mexican dish with a helping of this citrusy and creamy Avocado-Cilantro-Lime Rice.

Have you assembled a table of tacos but don’t know what to serve alongside them to make a complete meal? I mean, you could stick with the usual suspects, like chips and salsa or refried beans. But if you’re like me, chances are you’d like some rice to go with your meal, too.

Or maybe you were making burritos but wanted a special rice to bolster them with? Well, what a coincidence! Today, we’re going to make avocado-cilantro-lime rice. It’s the perfect addition to all your Mexican faves.

I’ve made Mexican cauliflower rice, which has the spice down pat, but the cauliflower, while supremely healthy, isn’t for everyone and every dish. I’ve also made baked cilantro lime rice, which is good but lacks the creaminess of the avocado. This recipe addresses both issues and is ideal when concocting Mexican-inspired recipes. Whether as a side or an ingredient, this rice is a delicious win!

Is Avocado-Cilantro-Lime Rice Healthy?

Rice is fairly healthy, particularly brown rice, which contains fiber, vitamins, and minerals. Plus, the avocados add heart-healthy fats. Overall, it’s a great dish for anyone on vegetarian, vegan, and gluten-free diets. That said, rice is high in carbs, so it’s not suitable for low-carb diets—that’s where cauliflower rice comes in—feel free to use it in this recipe.

How Should I Cook The Rice?

You have a few options these days. The obvious choice would be to use a rice cooker, the “set it and forget it” method that takes the thinking out of the process. You can also boil the rice on the stove, which is another straightforward procedure. If you want to try something new, why not bake your rice in the oven? Or, if you have one, use an Instant Pot.

How Do I Store Leftovers?

Let the rice cool completely, then put it in an airtight container. You can keep it in the fridge for up to 2 days. However, it’s worth noting that avocado will likely brown, but it shouldn’t affect the flavor. Reheat on your stove or in the microwave.

Serving Suggestions

The first dish that comes to mind is a Burrito Bowl—it calls for cauliflower rice, but you can easily replace it with this recipe. Another fave is this Cheesy Instant Pot Chicken And Rice Casserole; it’s gluten-free and easy to make, thanks to the Instant Pot. You can also set this dish alongside Twice-Baked Mexican Sweet Potatoes, if you’re okay with the carbs.

Ingredients

  • 2 medium avocados
  • 1 clove garlic crushed
  • 1/2 tsp ground coriander
  • 1/2 tsp salt
  • 1/2 cup cilantro chopped
  • 1 lime juice
  • 3 cups brown rice cooked

Instructions

  • Scoop the avocado flesh out of the skins and place it in a bowl. Use a fork to mash it until smooth.
  • Add the garlic, coriander, salt, cilantro, and lime juice. Stir.
  • Add the rice and mix until the rice has been coated.
