Savory, sweet, and studded with bacon, Arkansas Green Beans are a side that steals the spotlight.

I’ve never been to Arkansas, but thanks to this recipe, I feel like I’ve tasted a little piece of it. These green beans are the opposite of boring—tender, vibrant, and dressed up in a buttery glaze that hits sweet, savory, and salty notes all at once. With crispy bacon scattered on top and a hint of umami from soy sauce, it’s a veggie side dish that’s hard to stop eating.

Arkansas green beans is a Southern-style veggie dish known for its unexpected blend of flavors. A touch of brown sugar enhances the beans’ natural sweetness, while soy sauce, garlic, and bacon bring bold, savory depth. It’s a unique combo that transforms everyday ingredients into something memorable—and did I mention it’s incredibly easy to make?

In our family, Arkansas green beans have earned a permanent place on the holiday table, right alongside the stuffing and mashed potatoes. They’re also ideal for entertaining, since you can prep the whole dish ahead of time and just pop it in the oven when you’re ready to serve. It’s simple, delicious, and always a crowd-pleaser.

Ingredients for Arkansas green beans: fresh green beans, raw bacon, garlic, salt, soy sauce, olive oil, melted butter, and brown sugar.

A dish with roots—and room to make it your own

Arkansas green beans are more than just a tasty side; they carry a legacy rooted in Southern home cooking and community gatherings. Though the exact origins aren’t well documented, this dish likely found its way into countless church cookbooks and potluck tables, passed down from one generation to the next. It’s a recipe that speaks to the heart of Southern hospitality—simple, comforting, and made to share.

What makes it even better is how adaptable it is. While the classic version features a buttery brown sugar glaze, soy sauce, and crispy bacon, you can easily customize it to suit your taste. Prefer a little heat? Add a pinch of cayenne or red pepper flakes. Want extra savoriness? Toss in sautéed onions or mushrooms before roasting. Swap bacon for smoked sausage or pancetta. This flexibility means you can honor tradition while making the dish uniquely yours, perfect for any occasion.

How do I store leftovers?

Store Arkansas green beans in an airtight container in the fridge for 3-4 days—the bacon juices continue to infuse the beans, enhancing their flavor. To reheat, roast them in the oven to crisp the bacon and maintain the beans’ bite.

For longer storage, freeze in an airtight container for up to 6 months, though thawed beans may become softer than when fresh.

Serving suggestions

Serve these beans alongside hearty entrées like Crock-Pot Pork Chops, Meatballs Stroganoff, Hawaiian Garlic Shrimp, a succulent Pot Roast, or Stuffed Meatloaf. Add a basket of warm Potato Rolls, and you’ll be the talk of the town, no doubt about it!
