Get crispy and perfectly seasoned potatoes in half the time, using just your air fryer!

Air Fryer Potatoes

There may not be a more versatile food than the potato. Slice them, dice them, bake them whole, make Potato Soup, or – one of my favorite ways – air fry them. If you enjoy Roasted Potatoes but prefer a little more crisp in half the time, the air fryer is the way to go!

You can make or break a roasted potato depending on how crispy on the outside you can get them, while still being pillowy soft and fluffy on the inside. I truly believe that the air fryer is superior in achieving this, and it’s far more foolproof than any oven recipe.

Plus, these golden brown starchy nuggets require less fat and oil in an air fryer. That, alongside the perfect seasoning blend, makes air fryer potatoes my go-to whenever I need a quick and delicious side dish.

Are Air Fryer Potatoes Healthy?

Yummy dishes that are also good for you are the best kind. Thankfully, air fryer potatoes make the list of healthy foods! Potatoes are chock full of vitamin C and potassium, and they are a natural source of carbohydrates.

Keep this recipe close at hand if you find yourself with a house full of different dietary requirements, food preferences, or allergies. Air fryer potatoes are suitable for vegans and gluten-free diets, and it’s really only the keto kids who can’t have them!

Is a Yukon Gold Potato Better Than a Russet or Red Potato?

You can air fry any potato variety, however, the Yukon Gold potato boasts a buttery, yellow center that cooks up extra soft inside. You’ll always end up with a crispy exterior and a creamy interior with this variety.

Russets are firmer than Yukon Gold potatoes and crisp up nicely, but the inside of the russet potato won’t turn out as velvety as the Yukon Gold, so I save russets for baking. Red potatoes have thin skin and can also crisp nicely, so I usually opt for these when I can’t find Yukon Golds.

How to Make Ahead and Store

You can store leftover air fryer potatoes in the refrigerator in an airtight container for up to 5 days. To reheat, air fry at 400°F for about 4 minutes. You can also prep the potatoes and freeze them raw for up to 2 months, and air fry them from frozen.

Serving Suggestions

Serving ideas for air fryer potatoes are endless since they make an excellent side for many foods. The first ones that come to mind are classics like this Paleo Meatloaf or a Baked Salmon. Or how about some crispy air fryer potatoes next to a juicy Air Fryer Pork Tenderloin or some Stuffed Peppers? Dinner is served!

I also like to save my leftovers to reheat the next morning with a plate of Oven-Baked Scrambled Eggs for a fun and filling breakfast.

Ingredients

  • 1 pound Yukon Gold potatoes
  • 1 1/2 tablespoons extra virgin olive oil
  • 1/2 teaspoon fine sea salt or to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper or to taste
  • 1 tablespoon fresh chives finely chopped, for garnish

Instructions

  • Begin by prepping your potatoes. Cut them into uniform bite-sized cubes, approximately a 1/2-inch to 3/4-inch thick. You can keep the skin on.

  • In a mixing bowl, combine the potato pieces with extra virgin olive oil, sea salt, dried oregano, garlic powder, and black pepper. Make sure the potatoes are well-coated.

  • Arrange the seasoned potatoes in a single layer in the air fryer basket. Avoid overcrowding if you want them evenly crisped.

  • Set your air fryer to 400°F and cook the potatoes for 18 to 20 minutes. Toss the potatoes halfway through the cooking time.
  • The potatoes are ready once they turn golden brown (they need to be crispy on the outside and fork-tender on the inside). If you’re using fresh chives, sprinkle them over the top before serving.
