Sometimes, I’m like, “What have I not air-fried yet?” This led me to these stellar air-fryer mushrooms. It also made me wonder about the history of mushrooms.

Cleaning Mushrooms
There are two camps when it comes to cleaning mushrooms. Some say washing is not advised because mushrooms are like sponges and will absorb a lot of water (potentially ruining a dish), and others don’t see the problem in giving them a quick rinse (or even soak, if they are particularly grimy). Basically, it depends on the type of mushroom. Most store-bought mushrooms will only require gentle cleaning with a soft brush or damp towel. Foraged mushrooms, especially those with frilly gills, may need a good rinse or quick soak. In that case, the most important thing is to do so shortly before cooking and make sure that the mushrooms are dried thoroughly before they hit the pan.
We’re using baby bella mushrooms in this recipe. In this case, a damp towel or brush will suffice.

How to Make Ahead and Store
Although air-fryer mushrooms are best eaten immediately, they can be stored in the fridge in an airtight container for up to 5 days. To reheat, place them in a single layer in the air fryer at 400°F for about 5 minutes.

- 16 ounces baby bella mushrooms cleaned
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 tablespoon soy sauce
- 1/2 teaspoon sea salt
Instructions
- Begin by cleaning your baby bella mushrooms with a damp cloth or soft brush. They need to be completely dry.
- If the mushrooms are particularly large, cut them into halves or quarters for even cooking.

- In a mixing bowl, toss the mushrooms with the olive oil, garlic powder, onion powder, soy sauce, and sea salt.

- Arrange the mushrooms in a single layer in the air fryer basket.
- Set the air fryer to 400 degrees Fahrenheit, and cook the mushrooms for 10 to 15 minutes. Give the basket a good shake halfway through.

- Remove once the mushrooms are tender on the inside and crisp on the edges.
