Looking for a quick and hearty breakfast? These Air-Fryer Egg Bites are great as a weekend treat and perfect for your next lazy brunch!

Typically, my weekday breakfasts consist of quick smoothies slurped from a thermos while I brave the morning traffic on my way to work. If I manage to get everyone out the door on time and have a few precious minutes to spare, I might treat myself to a piece of toast slathered with salted butter or some overnight oats. But weekends? That’s a different story. With the luxury of not having to rush, I get to spoil my family with anything from a classic omelet or eggs Benedict to a full-on brunch buffet that invites us to linger in the kitchen and savor some quality time.
That doesn’t mean that I’m making anything overly complicated or spending hours cooking. Some of my most popular dishes are actually the simplest! Would you believe that in under twenty minutes you can have eight perfectly golden egg bites that could rival any fancy brunch menu at a restaurant? Thanks to the air fryer, this recipe is foolproof and hassle-free. With just a few simple ingredients, you can whip up these hearty, flavorful egg bites in the blink of an eye!

Are Air-Fryer Egg Bites Healthy?
I would say so! Eggs and cheese are a good source of protein, while the spinach adds fiber and iron. The great thing about this recipe is that you can easily customize it to your tastes and dietary needs. Adding extra veggies, such as chopped bell peppers, scallions, or sautéed mushrooms, will boost their nutritional profile. For a vegetarian version, feel free to leave out the ham. If watching your sodium intake, omit the salt. The cheddar will add enough flavor. Lactose intolerant? Replace the milk with soy milk and the cheese with a plant-based variety.

The Ease of the air fryer
While most traditional recipes for egg bites are oven-baked, I couldn’t resist adapting mine for the air fryer! In fact, I think these air-fryer egg bites turned out even softer and fluffier than their oven-baked counterparts. Beyond the convenience and speed, the air fryer offers a low-fat cooking method for almost anything, requiring much less oil to achieve the same delicious results. Whether you’re roasting veggies, cooking meat, frying up some game-day snacks, or making these decadent little egg bites, an air fryer is one of the best kitchen investments you can make.
To keep it working efficiently for years to come, be sure to take proper care of it. After each use, clean the basket thoroughly with warm, soapy water, and wipe down the inside with a paper towel or cloth to prevent food buildup.

How to Make Ahead and Store
Once cooled, the egg bites can be stored in an airtight container in the fridge for up to 4 days. They can also be wrapped in plastic, placed in a Ziploc bag, and frozen for up to 3 months. Make sure to let them thaw in the refrigerator before reheating in the air fryer (or oven) at 350°F for 6-8 minutes.
Serving Suggestions
These tasty egg bites are great on their own, but they are also a lovely addition to any weekend brunch spread. I love to serve them alongside crispy Million-Dollar Bacon, a stack of Hash Brown Waffles, and a refreshing Fruit Salad. And if the vibe is right, I’ll even make some mimosas!
