This Air-Fryer Cauliflower Gnocchi is an easy, low-carb dinner option. A quick, gluten-free meal that is so versatile!

On those cold winter nights, after the end of a long, exhausting workday, I find myself looking forward to a hearty, home-cooked, satisfying meal. The kind that doesn’t require a lot of effort, but still feels comforting and restorative. I know I’m not alone. There’s something decidedly soothing about indulging in a big bowl of pasta or tender little nuggets of gnocchi, and I must say that I’ve become especially fond of the latter. 

You’re going to love this lower-carb take on the popular comfort food. Made in the air fryer, this cauliflower gnocchi comes out beautifully crisp and golden, with a texture that’s both light and tender. Serve it with your favorite tomato sauce or as a healthy side. It’s perfect for those busy weeknights or when you just want to treat yourself to something delightful without having to spend hours in the kitchen.

Is Air-Fryer Cauliflower Gnocchi Healthy?

Absolutely! Cauliflower gnocchi is good for you. Not only is it a lower-carb choice compared to the regular version, but because it’s made with cauliflower, it’s a good source of fiber, vitamins, and minerals, too. To make the meal complete, serve the gnocchi with a homemade tomato sauce and perhaps a side of sautéed greens.

What is Gnocchi?

Gnocchi are small, pillow-shaped dumplings made with flour, semolina, or polenta and potatoes. Popular in northern Italy, they are served with everything from hearty meat sauces to sumptuous cheese sauces or simply finished with some pesto, butter and a scattering of freshly grated Parmesan cheese. To make the gnocchi, the dough is usually shaped into a long rope, from which the little morsels are cut and then shaped with a fork. They are usually cooked in plenty of salted, boiling water. Gnocchi have a quick cooking time (two to three minutes) and will float to the top of the pan when ready.

How To Make Ahead And Store

Air-fryer cauliflower gnocchi are best served fresh. However, leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 4 months. You’ll lose the crisp texture, but that won’t matter much if you’re serving them with tomato sauce. No need to thaw, in that case. Just add them to the sauce during the last 5 minutes of cooking.

Serving Suggestions

Now that your air-fryer cauliflower gnocchi is hot, perfectly golden brown, and ready to be devoured, it’s time to enjoy! Serve this gnocchi with some Instant-Pot Tomato Sauce and a side of sautéed or wilted spinach. They’re also a lovely pairing with Grilled Lobster Tail or a bowl of Italian Vegetable Soup. You can also serve them as a fun afternoon snack with some Cheese Sauce.

Air-Fryer Cauliflower Gnocchi

Ingredients

  • 1 bag Trader Joe's cauliflower gnocchi
  • Cooking spray

Instructions

  • Pre heat your air fryer to 400°F.
    Preheating the air fryer to 400°F for air-fryer cauliflower gnocchi.
  • If your gnocchi aren't thawed, spread them out on a plate and microwave for 1-2 minutes until completely thawed.

  • Once thawed, spread the gnocchi in the air fryer basket, trying to leave space in between the pieces. Spray with cooking spray.

  • Cook for 10 minutes, shake and cook for another 5 to 10 minutes, depending on if you want them lightly golden or dark.
