Ingredients

  • 6 medium russet potatoes
  • Butter
  • 1 1/2 pounds lean ground beef
  • 1/2 cup onion chopped
  • 2 carrots chopped small
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons tomato paste
  • 2 1/2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/2 cup frozen corn kernels
  • 1/2 cup frozen peas
  • 1 cup shredded sharp cheddar cheese

Instructions

  • Preheat the oven to 400 degrees Fahrenheit. Prepare potatoes for baking by rubbing with butter, seasoning with salt and pepper to taste, wrapping in foil, and piercing with a fork.
