While at first, the process might sound strange or difficult, boiling chicken is actually a convenient and simple process. All you do is combine the ingredients in a pot, bring it to a boil, and let the flavors mix and mingle for 90 minutes. The result? Let’s face it: you have no control over the seasonings and oils most pre-cooked meats and packaged broths are cooked with, and at the end of the day, they never taste as good as the homemade stuff. You can also add warming, earthy flavors from dried whole spices like peppercorns, coriander seeds, and cumin seeds.

After boiling, you can either separate the chicken meat from the bones to slice or shred, or you can cut the chicken into pieces like breasts, thighs, wings, and drumsticks. Ingredients

  • 1 whole chicken approximately 4 to 5 pounds
  • Water enough to cover the chicken
  • 2 teaspoons salt
  • 1 large onion quartered
  • 2 carrots cut into large chunks
  • 2 celery stalks cut into large chunks
  • 1 bay leaf
  • 10 whole black peppercorns

Instructions

  • Prepare the chicken by removing any giblets from the cavity and rinsing the chicken inside and out.
