Nothing reminds me of home and comforts me more than a bowl of warm, creamy Healthy Potato Soup.

I could eat potatoes every day! Who doesn’t love a good baked potato smothered in butter, or perhaps some savory hash browns for brunch? While there are so many incredible ways to eat potatoes, this recipe has to be one of my all-time favorites.

I make potato soup several times a month during the winter, and my family loves it. It’s creamy, comforting, and so easy to make. The best part? This recipe takes less than an hour from start to finish, so before you know it, you’ll have a big pot of delicious soup ready to enjoy with your loved ones.

Whether it’s served as a cozy dinner or a hearty lunch, this potato soup is sure to bring smiles to everyone’s face. Tender potatoes, a medley of aromatics, and milk come together to create a creamy, velvety soup that is simply irresistible. You’ll find yourself making it again and again throughout the winter, just like me!

Is This Potato Soup Healthy?

This dish is very healthy. Of course, this may not come as a big surprise, since the soup is mostly made up of vegetables! Potatoes are a source of vitamin C and potassium. Carrots contain beta-carotene and fiber.

For those who are vegan or dairy-free, this soup can still be enjoyed by making a simple change. Instead of using traditional dairy milk, you can easily swap it out for a plant-based alternative such as almond milk, oat milk, or soy milk, depending on your taste preference. These great alternatives will still provide the creamy texture and richness that make potato soup so satisfying without compromising on flavor or texture. Additionally, you can use low-fat milk.

Delectable Toppings

Though this soup is perfect as is, a few toppings will make it even more tempting. To keep the soup healthy, opt for fresh, green herbs such as chives, dill, flat-leaf parsley, or chervil. Chopped scallions, diced avocado, sautéed mushrooms, or even pumpkin seeds are also delicious. In the mood for more decadent options? Try some grated cheese, crispy bacon, caramelized onions, garlic croutons, or even a swirl of truffle oil.

How Can I Store Leftovers?

Leftover potato soup can be stored in an airtight container in the fridge for up to 1 week. If you prefer to freeze your soup, omit any dairy from the recipe and add it once it is thawed. Dairy doesn’t freeze well and will result in a grainy soup. You can freeze this soup for up to 3 months.

Serving Suggestions

My favorite way to serve potato soup is with a warm slice of Cauliflower Bread. The savory bread with the warm, creamy soup is perfection any time of year. My family also enjoys Delicious Apple Cinnamon Muffins with the healthy potato soup as a balanced midday treat.

If you want to have even more added nutrition to your meals, you can’t go wrong with a side of veggies, like these gorgeous honey-glazed carrots or these crispy Air-Fryer Asparagus. If you are in the mood for something lighter, how about trying this crisp, chilled Broccoli Salad to go with a steaming hot bowl of soup? The refreshing salad would work great for a family dinner, too!

Healthy Potato Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 cup onions diced
  • 1 cup carrots diced
  • 1/2 cup celery diced
  • 4 cups potatoes peeled and chopped into 1-inch pieces
  • 4 cups vegetable broth
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh rosemary chopped finely
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups milk of choice
  • Grated cheese, bacon, chives, or other toppings if desired

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onions, carrots, and celery, and sauté until they are soft and translucent, about 5 minutes.

  • Stir in the potatoes, vegetable broth, garlic powder, rosemary, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, or until the potatoes are tender.

  • Using an immersion blender, blend the soup directly in the pot until it reaches a creamy consistency. Alternatively, you can transfer the soup to a blender in batches and blend until smooth.

  • Stir in the milk and continue to cook the soup for an additional 5 minutes, or until it is heated through. Adjust the seasoning with more salt and pepper if needed.
  • Serve the soup hot, garnished with cheese, bacon, chives, or whatever you desire. DEVOUR!
